One of the favorite Cantonese comfort food, made in their every home. This inexpensive cooking, chicken with bitter gourd ( aka bitter melon, aka ampalaya in southeast Asian countries ) made with tasty fermented black bean sauce. Served with steam rice is the norm way of serving. And also it got very good health benefit. Helps our blood sugar well being. Enjoy.

1½ pounds bitter gourd, crosscut and salted
1 red chili pepper, sliced
1 boneless chicken quarter, diced ( skinless )
*marinade for meat *
1 Tbs. soy sauce
½ tsp. white pepper
1 Tbs. corn starch
2 Tbs. cooking oil
as needed: cooking oil
1 Tbs. ginger, minced
1 Tbs. garlic, minced
*premix sauce *
¼ cup chicken broth
1 Tbs. fermented black bean
1 Tbs. chili black bean paste
1 Tbs. oyster sauce
1 Tbs. sesame oil
2 Tbs. rice wine
1 Tbs. vinegar
½ tsp. white sugar
½ tsp. corn starch
