Chicken & Eggplant Stir Fry [Mom's Recipe] 

Great recipe!! My mom makes a similar dish using purple eggplants and pork (she browns it up a bit). I never liked egg plants until I tried my mom's stir fry. Thanks for sharing your mom's recipe.
