My family's most favorite comfort food is Chicken Kofta Curry. I make them at least once every two weeks. This recipe is derived from my Mother in Law's Kofta recipe. It's very simple and output is always delicious. Two steps involving Kofta mix and Kofta gravy.
Ingredients:
Chicken Kofta Mix
1. Boneless Chicken Breast - 1.5 Lbs
2. Bread Crumbs - 2 TBSP
3. Cilantro - 1 cup
4. Ginger - 2 inch cube
5. Onion - 2 count (medium size)
6. Salt - 1 tsp
7. Red Chili Powder - 1 tsp
8. Garam Masala Powder - 1 tsp
9. Coriander Powder - 1 tsp
10. Green Chilies - 4 count
11. Egg - 1 count
12. Almonds - 10 to 15
13. Roasted Chickpeas - 2 TBSP
14. Oil - ¼ cup
Kofta Curry
15. Ginger Garlic Paste - 3 TBSP
16. Crushed Tomatoes - ½ cup
17. Onion - 2 count (medium size)
18. Cilantro - ¼ cup
19. Green Chilies - 3 count
20. Salt - 1 tsp
21. Red Chili Powder - 1 tsp
22. Coriander Powder - 1 tsp
23. Turmeric Powder - ½ tsp
24. Garam Masala ¼ tsp
25. Cumin Seeds - ¼ tsp
26. Black Cardamom - 1 count
27. Cloves - 1 count
28. Cinnamon Stick - 1 count
29. Black Peppercorns - 6 count
Method:
1. Fry ¼ of finely sliced onion to crispy brown. Grind almonds and roasted
chickpeas.
2. Use food processor to finely chop ginger, green chilies and 1 and ½ onion. Mince Chicken finely.
3. Mix chicken mince, ginger+chilies+onion, almond chickpeas powder, fried crispy onion, cilantro.
4. Add salt, red chili powder, coriander powder, garam masala powder, bread crumbs and egg.
5. Make kofta balls.
6. Fry 1 sliced onion till golden brown. Take out in blender jug with 1 raw onion and blend to paste..
7. In same oil add ginger garlic paste, tomatoes, yogurt (optional) whole spices and spices with masala.
8. Simmer on low flame for 15 minutes till oil separates.
9. Add a cup of water and then gently put the meat balls into the gravy.
10. Cover and cook on low to medium flame for 25 to 30 minutes. Don’t put on pressure or use spoon.
11. Garnish with garam masala, cilantro and green chilies. Enjoy!
