Craving a high-protein, low-carb meal? These chicken patties are your answer! Packed with flavour and simple to make, they're perfect for a quick lunch or light dinner. Enjoy them on their own or with your favourite tomato-based sauce.
Recipe
1 tsp minced garlic
1 tsp minced ginger
1 tsp salt
1 tsp mixed dried herbs
1 tsp ground black pepper
1 onion grated (100g)
1 small red capsicum finely chopped
1 cup breadcrumbs (80g)
1 egg
1 tbsp lemon juice
1.1 pound chicken mince (500g)
Instructions:
1.In a mixing bowl, whisk together the egg, onion, herbs, garlic, ginger, salt, pepper, capsicum, and lemon juice.
2.Stir in the breadcrumbs until combined.
3.Add the chicken mince and mix with your hands until thoroughly blended.
4.Lightly oil a spoon and use it to shape the mixture into oval patties.
5.Place the patties on a baking paper-lined tray and gently flatten them with the back of a spoon.
6.Bake in a preheated 200°C (400°F) oven for approximately 20 minutes, or until cooked through.
Notes:
For extra flavour, consider adding other spices like cumin, coriander, or chili powder.
To make these patties even juicier, add a tablespoon of grated zucchini or carrot.
For a crispy exterior, pan-fry the patties in a little oil after baking.
These patties can be cooked on a grill or skillet for a different texture.
To make meatballs, simply roll the mixture into balls instead of patties.
Serve with a side salad or roasted vegetables for a complete meal.
These patties can be served hot or cold, making them perfect for meal prep.
To store leftovers, place cooled patties in an airtight container in the refrigerator for up to 3 days.
