Chicken Noodle Basket Recipe - How to Make Chinese Restaurant Style Chicken Basket at Home

Recipe:
For Making the Chicken Stock:
Ingredients:
Chicken Bony Pieces (Neck, Wings, etc)
Water / Pani : 1 litre
Salt / Namak : 1/2 tsp
Black Pepper / Kali Mirch Powder - 1/2 tsp
Procedure:
1. Add chicken pieces to a pan.
2. Add water, salt and black pepper powder.
3. Close the lid and cook on high flame till the water comes to boil.
4. Simmer for 1 hour.
5. Sieve and collect the chicken stock and keep aside.
6. You can shred the meat of bony pieces of chicken and can store in the refrigerator for making fried rice later.
For Making the Basket:
Ingredients:
Hakka Noodles : 2 blocks
Water / Paani : 1 litre
Salt / Namak : 1/2 tsp
Oil / Tel : 1 tbsp + 1 tbsp + for frying
Corn Flour : 2tbsp
Procedure:
1. To another broad bottomed pan, add water.
2. Add salt and 1 tbsp oil.
3. When the water comes to boil add blocks of hakka noodles.
4. Boil for few seconds till the strands separate. Do not over-cook to prevent stickiness.
5. Sieve its water and immediately pass cold water through the noodles to prevent stickiness.
6. Add 1 tbsp oil and 2 tbsp corn flour to the noodles.
7. Mix well and divide the noodles into 3 parts. Make 3 baskets out of these noodles.
8. Take a strainer any shape you like. Arrange the noodles at the base and along the sides to take the shape of the strainer. Keep pressing along the sides to fix the noodles.
9. To a deep wok or kadhai, add oil for frying.
10. When the oil is very hot, place a round spoon at the centre of the strainer or use an another strainer to fix the noodles in their place.
11. Dip the strainer slightly in the wok because the oil may spill.
12. Keep pressing the sides in between to prevent the tangling of the strands.
13. Turn and fry frequently along the sides.
14. When the basket turns light brown, remove the strainer from the wok.
15. Rest the strainer for 2 minutes. Invert and tap slightly and the basket will separate.
16. Noodle basket is ready.
For the Chicken:
Ingredients:
Boneless Chicken / Bina Haddi Ka Chicken : 200 grms, medium pieces
Salt / Namak : 1/2 tsp
Black Pepper / Kali Mirch Powder : 1/2 tsp
Corn Flour : 3 tbsp
An egg white
Oil / Tel : for frying
Procedure:
1. Add salt, black pepper powder, corn flour and an egg white to boneless chicken. Mix well.
2. Deep fry the chicken pieces on both sides till they turn light brown.
3. Remove from the pan and keep aside.
For The Chicken and Vegetable Sauce:
Ingredients:
Fried Chicken Pieces
Chicken Stock
Baby Corns : 2, cut into small and thin pieces
Capsicum / Shimla Mirch : 1, cut into cubes
Cauli-florets / Gobi Ke Phool : 1 cup
Carrot / Gajar : 1, cut into thin pieces
Beans / Binis Ki Phalli : 1/4th cup, cut vertically into 2 inch pieces
Onion / Pyaz : 1, cubed
Oil / Tel : 3 tbsp
Garlic Cloves / Lehsan : 5, diced
Red Chilli Sauce : 2 tbsp
Red Chilli / Lal Mirch Powder : 1 tsp
Salt / Namak : 1/2 tsp
Soya Sauce : 2 tbsp
Red Food Colour / Khane ka Lal Rang : few pinches (optional)
Water / Paani : 2 tbsp
Cornflour : 2 tbsp
Green Spring Onions / Hari Pyaz Ki Patti : 1 tbsp
Chopped Coriander / Hara Dhaniya : 2 tbsp
Vinegar / Sirka : 1 tbsp
Procedure:
1. Remove the excess oil and leave only 3 tbsp oil in the pan.
2. Add diced garlic and red chilli sauce. Stir fry for 30 sec.
3. Add red chilli powder, salt, soya sauce and red food colour. Mix well.
4. Add the chicken stock and baby corns. Close the lid and cook for 2-3 minutes. Baby corns take a longer time to tenderize.
5. Add cubes of capsicum, carrot, beans and cubes of onion.
6. Close the lid and cook for 2-3 minutes till the vegetables are tenderized.
7. Add fried chicken pieces.
8. Add 2 tbsp water to 2 tbsp cornflour. Mix well.
9. Add this cornflour paste to the pan while stirring continuously.
10. Add chopped coriander and simmer for 1 minute.
11. Add vinegar and mix well.
12. The sauce is ready, add 1 tbsp green spring onions.
For Assembling:
Ingredients:
Chicken Noodle Basket
Sauce
Procedure:
1. Pour the hot sauce into the noodle basket.
2. For this, firstly add the vegetables and chicken and then pour the sauce.
3. The Delicious Chinese Restaurant Style Chicken Noodle Basket is ready. Serve hot.
