Making Kunafa is easy. Learn how to make the delicious Kunafeh without oven in a pan.
Recipe:
Ingredients:
Thin Vermicelli / Sewiyan : 350 grms
Full Fat Milk / Balai Wala Doodh - 1 litre
Orange Food Colour / Khane ka Zafrani Rang : 1/4 tsp
Melted Butter / Makkhan - 1/2 std cup
Grated Mozzarella Cheese : 100 grms or nearly 1 std cup
Lemon Juice / Nimbu Ka Ras - from 2 medium lemons
Water / Pani - 1/4th cup
Sugar / Shakar - 1/2 cup
Rose Water / Gulab Ka Arq - 1 tbsp
Honey : 2-4 tbsp as per your taste
Pistachios / Piste : 25-50 grms as per the requirement
Procedure:
1. To make cream cheese, bring to boil full fat milk.
2. Add juice of twp medium sized lemons to curdle it.
3. Place a cloth over the strainer. Now strain the whey and collect the grains of curd. Pass plain water through this.
4. Squeeze the whey or liquid.
5. Leave the cheese or the grains of curd in the strainer for 15 min.
6. Do not keep very dry because some whey left in this will facilitate the grinding and will also make it creamier and softer.
7. Grind this collected cheese or curd in 3-4 turns till it attains a creamy texture.
8. Cream cheese is ready.
9. For making sugar syrup, add 1/4th cup water to a pan.
10. When the water comes to boil, add sugar.
11. Keep stirring and cook till the sugar is dissolved thoroughly.
12. Add rose water. Cook till a thick consistency sugar syrup is formed.
13. Switch off the flame.
14. Add honey as per your taste.
15. Mix well and keep this syrup aside.
16. Grind roughly 50 grms pistachios. 25 grms will be enough for garnishing but to sprinkle more over each serving take 50 grms pistachios.
17. Crush vermicelli.
18. Add orange food colour to 1/2 std cup melted butter. Mix well.
19. Add this butter to crushed vermicelli.
20. Grease (with melted butter) a pan with edges.
21. Layer half of the vermicelli in the pan, press thoroughly with a masher.
22. Now layer the cream cheese that we have prepared or you can use ready made cream cheese.
23. Add grated mozarella cheese.
24. Layer the remaining vermicelli.
25. Close the lid. Cook on low flame for 5-10 minutes.
26. Keep changing the position of the pan to prevent burning and also for even cooking.
27. Level the sides.
28. Place a greased aluminium plate upside down over this pan.
29. Carefully flip and cook again on low flame for 5 to10 min. Keep changing the position of the plate.
30. Level Kunafa while pressing slightly.
31. Pour sugar and honey syrup over this kunafa.
32. Garnish with ground pistachios.
The delicious Kunafa is ready, serve while it is still warm
