If you wanted to make this recipe really easy you could use canned chicken stew in a Pillsbury biscuit topped with cheese.
Or, you could make it super simple with 1.5 cups frozen mixed veggies, 1 can chicken gravy and 1 cup cooked chicken cubed in Pillsbury biscuit topped with cheese.
What I did:
Sautéed 1/2 cup celery in 2 Tbsp butter. When soft I added 2 Tbsp flour, stirred together and let cook for 2 minutes. Then I added 1 cup chicken oxo prepared to make a gravy. I then added 1/2 cup frozen shredded carrots, 1/2 cup frozen peas and 1 cup cooked chicken, cubed.
I pressed one Pillsbury biscuit into each muffin tin and then filled with the chicken stew mixture. I used mashed potatoes on top but that was purely just to use them up. You could add cheese right after the stew and cook that way.
I would suggest if you are using potatoes that they need to be cooked first as these biscuits don't cook that long to cook raw potatoes.
Bake in a 375F preheated oven for 15-20 minutes or until browned to your liking. I removed mine from the muffin tin to cool on a rack or you risk your biscuit getting soggy.
