Chicken Pineapple Kabobs
INGREDIENTS
FOR THE MARINADE
¼ cup olive oil
2 TBSP Soy sauce
2 garlic cloves, pressed
1” knob fresh ginger, grated
Juice of 1 lime
1 tsp salt
SKEWERS
½ pound boneless, skinless chicken thighs, 1” cubes
1 med red onion, sliced into large 2” chunks
1 bell pepper, cut into large 2” chunks
¼ Fresh Pineapple, cut into 1-2” cubes
INSTRUCTIONS
FOR THE MARINADE
1. Combine all of the ingredients into a large bowl.
2. Add the chicken and stir well.
3. Cover and place in the fridge for at least 30 minutes but up to 24 hours.
FOR THE KABOBS
1. Get your grill started.
2. Using skewers, build the kabobs alternating 1 each of chicken, onion, pepper and pineapple, repeat until the skewer is full but not crowded.
3. Once all the skewers are filled, drizzle the remaining marinade over them.
4. Grill the kabobs on medium high heat, turning them every few minutes to prevent burning, until the chicken is cooked through. About 10 minutes.
