Chicken Pot Pie Cobbler
Ingredients:
1 stick unsalted butter (melted)
3 cups of cooked chicken cut into pieces
12 ounce bag of frozen peas and carrots
salt (to taste)
pepper (to taste)
thyme (to taste)
11 ounce box of Red Lobster Cheddar Bay Biscuit Mix
2 cups of milk
10.5 ounce can cream of celery soup (or cream of chicken or cream of mushroom)
2 cups of chicken broth
Preheat oven to 350 degrees.
Pour melted butter into a greased 9" x 13" baking dish
Add chicken on top of the butter. Do not mix!
Add frozen peas and carrots. Do not mix!
Add salt, pepper and thyme. Do not mix!
In a bowl combine:
Red Lobster Cheddar Bay Biscuit Mix and the seasoning that comes with it. Then add 2 cups of milk and whisk until well combined.
Pour over the chicken and vegetables. Do not mix!
In a bowl combine:
Cream of celery soup and 2 cups of chicken broth. Whisk until well combined.
Pour over the the top of the baking dish. Do not mix!
Bake for 50-60 minutes until bubbly and golden brown on top.
