Chicken Satay ~ Gluten Free

Skewered on sticks, these chicken thighs are marinated and cooked to perfection. Chicken satay is never complete without its trusty sidekick, the peanut sauce.
Please check the ingredients you're using, there are regular and gluten free versions of these! I have the gluten free ingredients and written instructions on my website: firefoodpro.com for reference.
Ingredients:
Chicken Thighs
Coconut Milk
Seasoning Sauce
Curry Powder
Turmeric
Garlic Cloves
Ginger
Brown Sugar
Fish Sauce
Oil
Cilantro
Sauce:
Peanut Butter
Seasoning Sauce
Lime
Brown Sugar
Water
Ginger
Directions:
Soak skewers in water, set aside
In a bowl grate a knob of ginger and equal parts garlic cloves, set aside
Cut the chicken thighs into bite sized pieces and combine into the bowl with ginger and garlic
In the same bowl add in lime juice, turmeric powder, curry powder, seasoning sauce, fish sauce, brown sugar, oil, and coconut milk. Mix and let set for 15 minutes
In a small bowl add in 3 tbsp peanut butter, grated ginger, seasoning sauce, lime juice, brown sugar, and water, mix and set aside
Put the chicken thighs on the skewers and cook for 10-15 minutes in a cast iron skillet on medium high heat.
Serve with peanut sauce, peanuts and cilantro
