A slow cooker is an electric pot that can be used to cook food quickly at high pressure (like a pressure cooker), or slowly over a long period of time at a low temperature. It is ideal great for making stews such as tagines. In this recipe, the Dada Najat will show you how to make a chicken tagine in the pressure cooker. To prepare it, all you need is chicken, carrots, onions, and a blend of spices.
Ingredients:
4 Bone-in chicken pieces (thigh and/or breast)
1 teaspoon Salt
1/2 teaspoon Black pepper
1 heaping teaspoon Ground ginger
1 teaspoon Turmeric
2 cloves Garlic, grated
100ml (1/2 cup) Water
1 medium Yellow onion, finely chopped
2 tablespoons Olive oil
2 tablespoons Vegetable oil
3 medium Carrots, peeled and cut into 8 pieces
4 tablespoons Parsley and cilantro, finely chopped 1/2
1/2 Preserved lemon
200ml (1 cup) Water
Handful Red olives
Steps:
1- Turn on the slow cooker, then select the "sauté" option.
2- Add the chicken
3- Add salt, black pepper, ginger, turmeric, grated garlic and water.
4- Saute the chicken for about 5 minutes, turning it halfway through, until all sides are golden.
5- Add the onions, olive oil and vegetable oil. Stir to combine and allow everything to cook for 5 minutes.
6- Add the carrots, half of the herbs, preserved lemon and water.
7- Cover the slow cooker, then lock the cover in place.
8- Select the "poultry" option .
9- Adjust the cooking time to 30 minutes and click on "start."
10- Release the steam from the slow cooker and uncover it to check on the tagine.
11- Add the olives and the rest of the herbs.
12- Turn on the slow cooker, then select the "sauté" option. Allow the tagine to simmer for 5 more minutes or until the sauce is reduced to your liking. Serve hot with Moroccan bread!
