A superbly flavoured spicy Indian dish prepared using onions, fresh chillies and my succulent yoghurt free chicken tikka

ingredients
3 tablespoons vegetable oil
2 green cardamom pods
1 large finely sliced brown/white onion (200g)
1 tablespoon garlic & ginger paste
1 tablespoon tomato paste
1 tablespoon mix powder / curry powder
2 teaspoon chilli powder
1/2 teaspoon salt
1/2 teaspoon coriander powder
1/2 teaspoon fenugreek leaves (kasoori methi)
1/4 teaspoon cumin powder
1/4 teaspoon turmeric powder
1/4 teaspoon sugar
3 green finger chillies (sliced finely)
1 red birds eye chilli (sliced finely)
300 millilitres boiling water
250g chicken tikka ( • Yoghurt Free Chicken T... )
1/4 cup fresh/chopped coriander
1" ginger sliced finely
method
1. add the oil, green cardamom pods and finely sliced onions to a pan and heat on medium until soft and beginning to brown. don't rush, this should take around 10 minutes
2. stir in the garlic and ginger paste and cook out for around 30 seconds
3. add the tomato puree, a little water and stir through, once again cook out for around 30 seconds
4. add the mix powder, chilli, salt, coriander powder, fenugreek leaves, cumin, turmeric and sugar and stir in well
5. allow to cook out for a minute or two adding a little boiling water if it's looking dry and fry until the oil begins to separate
6. add most of the fresh chillies (retain some for decoration) and cook for a couple of minutes to infuse the flavours, turn the heat up to max and add half of the boiling water
7. add the rest of the water and allow to reduce for 5 minutes
8. add the meat, most of the fresh coriander and ginger (retain some for decoration) and stir to incorporate
10. serve when the sauce is the thickness you require with a sprinkle of the remaining chillies, coriander and fresh ginger
For 2 servings

2 tablespoons tomato paste
1.5 tablespoons mix powder / curry powder
1 tablespoon chilli powder
3/4 teaspoon salt
3/4 teaspoon coriander powder
3/4 teaspoon fenugreek leaves (kasoori methi)
1/2 teaspoon cumin powder
1/2 teaspoon turmeric powder
1/2 teaspoon sugar
5 green finger chillies (sliced finely)
2 red birds eye chilli (sliced finely)
600 millilitres boiling water
500g chicken tikka
1/4 cup fresh/chopped coriander
1.5" ginger sliced finely
For 4 servings
9 tablespoons vegetable oil
4 green cardamom pods
4 large finely sliced brown/white onion (800g)
4 tablespoons garlic & ginger paste
4 tablespoons tomato paste
3 tablespoons mix powder / curry powder
5 teaspoons chilli powder
1.5 teaspoons salt
1.5 teaspoon coriander powder
1.5 teaspoon fenugreek leaves (kasoori methi)
3/4 teaspoon cumin powder
3/4 teaspoon turmeric powder
1 teaspoon sugar
8 green finger chillies (sliced finely)
3 red birds eye chilli (sliced finely)
1 litre boiling water
1kg chicken tikka
1/2 cup fresh/chopped coriander
2" ginger sliced finely
