ingredients
3 tablespoons vegetable oil
2 green cardamom pods
1 large finely sliced brown/white onion (200g)
1 tablespoon garlic & ginger paste
1 tablespoon tomato paste
1 tablespoon mix powder / curry powder
2 teaspoon chilli powder
1/2 teaspoon salt
1/2 teaspoon coriander powder
1/2 teaspoon fenugreek leaves (kasoori methi)
1/4 teaspoon cumin powder
1/4 teaspoon turmeric powder
1/4 teaspoon sugar
3 green finger chillies (sliced finely)
1 red birds eye chilli (sliced finely)
300 millilitres boiling water
250g chicken tikka ( • Yoghurt Free Chicken T... )
1/4 cup fresh/chopped coriander
1" ginger sliced finely
method
1. add the oil, green cardamom pods and finely sliced onions to a pan and heat on medium until soft and beginning to brown. don't rush, this should take around 10 minutes
2. stir in the garlic and ginger paste and cook out for around 30 seconds
3. add the tomato puree, a little water and stir through, once again cook out for around 30 seconds
4. add the mix powder, chilli, salt, coriander powder, fenugreek leaves, cumin, turmeric and sugar and stir in well
5. allow to cook out for a minute or two adding a little boiling water if it's looking dry and fry until the oil begins to separate
6. add most of the fresh chillies (retain some for decoration) and cook for a couple of minutes to infuse the flavours, turn the heat up to max and add half of the boiling water
7. add the rest of the water and allow to reduce for 5 minutes
8. add the meat, most of the fresh coriander and ginger (retain some for decoration) and stir to incorporate
10. serve when the sauce is the thickness you require with a sprinkle of the remaining chillies, coriander and fresh ginger

Excellent - the idea of adding/recommending the additional ingredients for 2 & 4 people...I have never seen that ever before on any RU-vid BIR-type creators. 👏

@@TheCurryKid Really top idea having the different ingredients amounts Josh. I usually cook enough, to have one portion to eat straight away, and one (or even two) portions to go in the freezer for again sometime 👏👏👏

I know you can change proteins, but do you think this recipe would go well with your precooked lamb, or would things need tweaking?
@TheCurryKid
@TheCurryKid Год назад
Hi, it should work fine. I tend to avoid lamb in milder dishes as the stronger flavour of the lamb comes through but this dish should match that level of flavour. Let me know what you think, I’ve literally just started marinating 2kg of chicken for my pre cooked chicken but need to revisit my old lamb one as that’s years old

Hi Curry Kid, was the chicken tikka cooked?
@TheCurryKid
@TheCurryKid Год назад
Hi yes, I pre-cook about 1kg at a time and freeze. I then simply defrost a bit in the microwave for 30-60 seconds, cut in half and add to the dish

Hi yes, mine was from Tesco's or Asda, all I ever do is make sure I coat it in oil inside and heat it up to seal it more each time. It's a fantastic bit of kit and was under £10. B&Q even sell them www.diy.com/departments/oypla-30cm-cast-iron-non-stick-wok-skillet-frying-cooking-pan/5060544757506_BQ.prd
