Tofu | chickpea | tofu recipes | how to make tofu | soy free tofu
Chickpea - ½ cup
Salt - to taste
Water - 2 ½ cups
Ghee / Clarified Butter - a little
Method:
1. Soak chickpeas overnight in water and drain soaked water.
2. Add 2 ½ cups water to this
3. Transfer to a blender and grind smooth.
4. You can even add ginger and chillies to this for extra flavour.
5. Now transfer this to a non-sticking pan on medium low flame and keep stirring.
6. Add salt to taste to this.
7. Keep stirring till it begins to thicken to a paste, this may take about 20 to 25 minutes.
8. Now the paste sticks to the spatula and hardly moves when you tilt the pan.
9. Turn the heat to low now, stir the paste for another 2 to 3 minutes.
10. Transfer this paste to a container and smoothen out the top.
11. Let this set for around 1 hour in fridge.
12. After one hour, the tofu has set.
13. The tofu easily pulls away from the sides.
14. Slice the tofu with a knife.
15. If it has not set properly, then your tofu might still be raw and you must not eat it. So cook it a little longer with a little more water and try again.
16. Cut the tofu to cubes.
17. Add a little ghee on a pan on low flame and transfer the cut tofu cubes.
18. Keep turning them until they look crispy.
Tofu curry: (Indian version :))
Chickpea tofu cubes - fried earlier
Onion (small - roughly chopped) - 2
Tomato - (roughly chopped) - 1
Ginger garlic paste - 1 tbsp
Green / red chilli - 1
Kasuri Methi (dry fenugreek leaves) - ½ tsp
Red chilli powder - ¼ tsp
Garam Masala - 1 tsp
Cashews - 6
Ghee / butter - 1 tbsp
Honey - 1 tsp
Coriander leaves - a handful
Method:
1. Keep a pan on low flame and add 1 tbsp of ginger garlic paste and 1 green/ red chilli adding 1 tbsp of oil.
2. Sauté till raw smell is gone.
3. Now add 2 small roughly chopped onions.
4. Add salt to taste.
5. And sauté till raw smell is gone.
6. Add 1 roughly chopped tomatoes to this.
7. Now add salt to taste to this.
8. Add 5 to 6 cashews to this and add little water.
9. Cover and cook till raw smell of tomatoes is gone.
10. Once the cashews are cooked, allow it to cool down.
11. Transfer this to a blender.
12. Heat a pan on low flame and add 1 tsp of ghee.
13. Add ¼ tsp of red chilli powder to this and fry for 15 to 20 seconds, do not let this burn.
14. Now transfer the blended mixture to this using a filter.
15. Add little water to this.
16. Cover and cook for about 2 minutes.
17. Heat another pan and add ½ tsp Kasuri Methi / dry fenugreek leaves and fry for about 30 seconds. Do not let it burn.
18. Now rub this between your palms and add it to this.
19. Add 1 tsp garam masala to this.
20. Now to this add the fried chickpea tofu to this and add 1 tsp honey to this.
21. Add a handful of coriander leaves for garnish.
22. Serve hot with rice/ chapatis.
23. Enjoy.
