This is my morning routine with my circus, and today is Mid Autumn festival (Moon Festival) celebrating with Moon cakes.
This recipe is very easy, no baking! You can make it today!
Moon cake wrapper ingredients:
100g Glutinous rice flour
100g Rice flour
50g Wheat Starch
380ml Milk
70ml Vegetable oil
Moon cake filling ingredients:
6 eggs
150g Butter (room temp)
60g Wheat starch
120g Milk powder
100g Sugar
1. Mix milk, vegetable oil together, then add glutinous rice flour, rice flour and wheat starch. Mix well until smooth.
2. Steam the batter for 20-25 minutes , cool on the side for 5 minutes, then use fork or chopstick break the dough, put on a surface, knead the dough until smooth.
3. Make the filling. In the mixer beat the butter until fluffy, then add sugar mix again. Add eggs one by one, each one beat until total mixed then add next one.
4. Add Wheat starch, milk powder in with the eggs and butter, mix very well.
5. Double boiler steam the filling for 5 minutes, then mix well, steam gain for another 5 minutes. Then leave the lid open, mix the filling until cooked, all the liquid is gone.
6. Divide the filling and wrapper 25g each.
7. Wrap the filling in the wrapper, press in the moon cake mold.
8. Moon cakes can be eaten right away. But best to chill in the fridge for 1-2 hours.
This recipe makes 25 moon cakes, the fresh moon cakes can store in a container in the fridge up to 3 days.
