Salted egg is a very popular Chinese ingredient made by soaking duck egg in brine. It is wildly used in many desserts like pastry, zongzi, moon cake.., it also can be cook with many other ingredients like tofu, crab, shrimp to bring a rich oily salty flavor. Usually, the normal way will take months to make salted egg because you have to soak the egg in the brine. But today we just do the yolk. It will only take one night. It is absolutely delicious and easy to make.

Ingredients:
- duck eggs
- salt
- High levels of alcohol wine
- You can use any egg. I like duck eggs because they got bigger yolk than the chicken egg. And most of the times we will only use the salted egg yolk.
- Crack them all into the bowl and don’t break the egg yolk.
- Carefully wash the shell. Dry it up completely.
- Put some salt into the shell. I put about 1/2 tsp of salt in each. Try to cover it evenly.
- Next, put the yolk back into the shell.
- Then cover it with another layer of salt. Don’t need to worry about how much salt, just cover it completely.
- Last step. Add about 1/8 tsp of the high level of alcohol in each egg yolk. Because duck egg has a weird smell and adding alcohol will help that.
- Cover it. Let that sit in the fridge overnight. Or you can wait few more days if you are patience; the egg yolk will taste even better.
- Next day, It became firm and transparent. Wash off the excess salt. It is so shiny and beautiful. Looks like gummy sugar. Put it in the high alcohol level wine for few second. This will kill the bacteria so it lasts longer.
- How do we save this thing? You can put it in a jar that is full of vegetable oil. It will last 2 weeks in the fridge.

I love it alot of ways but my thai family has an interesting way of eating it: you put the shelled whole egg in a bowl of rice, then top the rice with tea. They use either jasmine or chrysanthemum tea, but sometimes oolong. The tea flavors the rice and helps cut the richness of the salted duck egg while also leaching the salt out which also helps flavor the rice. It's a nice, lighter version of most salted egg recipes which are usually really rich.

There are quite a few videos online showing ways of making salted eggs, But your method is by far the simplest and apparently get the same result, As always you explain everything in steps and clearly, thank you for sharing this simple way, I will definitely test this method out.

I did this last night and in 24 hours the texture is perfect, taste is great, the shape isn't that round rather flat but it's shiny and delicious. I cooked it into salted egg sauce and ate them with steam rice and fried fish it's very satisfying. Thanks for sharing your recipe. In where I live in the U.S finding salted egg is hard and pricey. I will share the 48 hours and 72 hours results hopefully tomorrow.

I used vodka then on the second time I used none because salt is also bacteria killer. Don't you think?

Apparently I forgot to share that after 48 hours and after 72 hours results. For using them with sweet cake such as a moon cake I would rather the 72 hours result. For eating them as a salty dishes for example salted egg sauce or to eat them with rice I would rather the 48 hours. But since it is just one day different why don't you try all of them and see which one you prefer the most. Nowadays I make them so often that I just used Tupperware and place a bit salt on the bottom and on the top then place them without their cover inside the refrigerator. The result is amazing I'm so thankful for the original recipe.

Awesome I'm going to try this, one small point, its better to wash the eggs first to avoid cross contamination from the dirty egg shell.

i think it's better to wash it first than after breaking it like her.. that way we don't have to dry the inside and the yolk wouldn't get contaminated with dirt from the egg shell. but idk.. it's my opinion

I love melon buns with salted egg yolks. I get them in Chinatown in Boston, but the ones I've had always have chicken egg yolks. I have never had a salted duck yolk! I have wondered how to make these, thank you! I would love to see a recipe for the salted egg yolk winter melon bun. :)

Yes, salted duck eggs are excellent in many stir-fry dishes for both vegetables and meat, even desserts and dim sum buns. I like them in bitter gourds, deep fried pork ribs, prawns and Chilli crabs. The mashed salted duck yolks when fried in butter and aromatic curry leaves, take these meat dishes to the next level. Absolutely yummy. 😋

Thank you for showing me this method! Three of my family are born in late January and two more are born in early February, right near the time of the New Year. Your videos showed me exactly what I would like to make and send to my family members in Japan Japan and America. I will make regular salt-and-sugar preserved yolks for that, but right now I will make practice wagashi and moon cakes using this method. I watched your videos about making moon cakes for the New Year, and also some videos about making wagashi Japanese sweets, and I think they would be both very nice to serve for our family birthday celebration and the New Year as well. I wish you great health, success, prosperity, and happiness as this year begins to close and in the New Year.

I only just realized this probably sounds like I'm saying "Asian foods and holidays are all alike," and I know they're absolutely not. I just enjoy combining good ideas together. (I also make Thanksgiving egg rolls stuffed with ground turkey, collard greens, and pumpkin, with a cranberry dipping sauce. I'm like this.)

What level of alcohol do you suggest? Here in California, wine is limited to 15% alcohol by volume. Can I used 50% by volume vodka?

How does it taste compare to normal salted whole eggs in brine?

Washing the eggs well before you crack them open will also help keep the bacterial count down. Washing your hands well before cracking the egg will also help. The eggs are sterile inside the shell (unless shell is cracked or eggs are too old---there are videos that will help you find out if the egg is too old--cracked and old eggs should be discarded as they are no longer sterile on the inside)

I tried this before. It can be an okay substitute. However, the taste is definitely different than the traditional way, it is a lot more salty and not as rich.

It's easier to separate yolks by using your upturned fingers rather than your upturned palm. Just spread your fingers slightly to let the white begin to fall through, then close them to pinch off the white, repeating as necessary until all the white has be pinched away from the yolk. That way no pointed fingertips ever risk puncturing the yolk while trying to pull away the white. Also, could you please post some savory recipes that use these salted yolks? I am intrigued!

You can try it but the egg yolk is not running anymore and it is very salty. Not sure if it is good for noodle.

You can use it to marinate meat or make egg white cookies. But duck egg white has a weird smell so I don't like to use it.

Hi Mandy, can you use chicken eggs instead. Duck eggs availability in Arizona are not that good. I watched another vlog, "Made with Lau", and he used extra large chicken eggs instead. Thank you if you can help me with this dilemma. What kind of rice wine? Is sake good to use or Shao Hsing rice cooking wine? Thank you.

You might want to check the alcohol level. You need the high level because it is not only for the smell but also can kill the bacteria. If you do not tend to save it for a long time you can use the normal cooking wine.

Preserved egg and salted are different in texture, taste, color and the way how it is made. So this is not the same as the preserved egg.
