I usually bake everything with a fan, but you don't have to use the fan. It will probably take a little longer if you don't have a fan... though make sure you take it out when it's still a bit wobbly in the middle 😉
Can you tell me please how you prepared the whip cream to spoon like that? Was it partially frozen? Did you oil your spoon? When I have worked with whip cream, usually some cream stays on the spoon and I can't plate it as a solid mass the way you do. So I am curious. Please advise. Thanks.
The cream is just whipped and the spoon run under warm water for a couple of seconds before making the quenelle. You can dry the spoon quickly or just shake off the excess water and it should work 😉

I'm sure it would work to do that. You would get some amazing colours! Or you could make a little white chocolate ganache and colour it to get a more saucy consistency.
