WOW! I could really use a piece about now 🙂 I have a question: When you made the cherry mousse (and chocolate) you used a different method. I see many use this method now. Can the original method (eggs, butter) be used to make a fruit mousse? Is this why you didn't use it?
I just made the cake and some issues with chocolate mirror glaze. in description you mentioned 5gr of gelatin, but in video is not exemplified when is added? the glaze includes gelatin or not? Thank you 🙏🏻

Hi, I do have a question about gelatin leaves, mine weighs around 2.5g per sheet, and in your mirror glaze recipe it shows 3 sheets (5g), should i follow the grams or the number of sheets? My glaze turned out a but runny after being refrigerated so I'm not sure if it's the issue of gelatin...
