So much I loved the Vanilla Eclair Cake, the Polish Karpatka, that I had to do a chocolate version of it. As a chocolate lover I simply adore this version. Two layers of chocolate choux pastry that are filled with a generous amount of creamy and silky chocolate cream. It’s simply hard to resist to this delicious Chocolate Eclair Cake - Chocolate Karpatka .

Ingredients
Makes about 10-12 servings
Chocolate Choux Pastry Layers
1/2 cup (65g) flour
1/4 cup (30g) cocoa powder
1/3 cup (80ml) milk
1/3 cup (80ml) water
2 tsp (10g) sugar
1/2 tsp (2g) salt
2 oz (60g) unsalted butter
3 eggs
Chocolate Filling
2 cups (500ml) milk
2/3 cup (135g) sugar
1/4 cup (30g) cornstarch
1 tbsp (10g) cocoa powder
2 eggs
4 oz (120g) semisweet chocolate
1 tsp (5g) vanilla extract
1/2 tsp (2g) salt
3/4 cup (170g) butter, room temperature

I am a fan of this channel! Every celebration I have, I am here to get a recipe and it never fails me. Thanks so much for being an Amazing Pastry Chef! I have a question regarding this recipe; I only have one 8 inch pan, so I was thinking of baking 1/2 of Cheux first and then the other. Or should I do it all in one go and cut in half with a knife? This looks so good! I was wondering if its important to bake the choux pastry in a spring form pan or if a round baking tin (no detachable sides) would do?

I think if you don't use a pan with detachable sides, you'll crush the choux pastry because you won't be able to take it out Maybe if you put paper on the bottom it will help.

I'm planning to make this for a family get together. But I have a small oven, is it possible to bake the layers separately. Can I make the dough, bake one and bake the second one after. Can the dough be left outside till the first layer bakes?
