I get asked how to make my buttercream, ganache, and modeling chocolate. I did the buttercream already, I will be doing the modeling chocolate at a later date, but I just uploaded a quick and easy way to create a simple chocolate ganache with only 2 ingredients that can transform into 4 different ganache styles.

Only ever made it one time to frost a cake because its all I had on hand. And I used 2% milk to make it, cause again its all I ever have on hand.

Hi! I used your recipe, well not quite. I simplified it even more so hopefully this will help someone. Pretty simple, I measured 50 grams by weight of heavy whipping cream. 65 grams by weight of sugar free chocolate chips. (ChocZero). Heated those ingredients in the microwave for 20 seconds at a time until melted. Added 1/8 cup of erythritol and 1/2 teaspoon of Hershey’s unsweetened cocoa. It just seemed too blah with just chips and heavy cream. And I’m telling you, it’s pretty awesome now. It makes about 5 tablespoons of frosting. I hope someone tries this, I don’t think you’ll be disappointed. P. S. I may use allulose next time.

I just took Amul dark chocolate 2 parts and 1 part cream n melted it .... then refrigerated it from 1/2 -1 hr and took it out it was a good ganache when I whisked it , it turned out to be a good whipped chocolate cream 🤗🤗 this is more easy when you don’t get compound chocolate use Amul chocolate Fun fact: I sieved the chhali of the milk and got the cream from it and it was soo good to make ganache 🤩

@@payalkevaltani2343 it’s good with Amul fresh cream n if you want to whisk you can use fork also .. with fork whisk it for 5-8 mins . In case of white compound, I’ve never melted it so I don’t know how to melt it .. if u know the melting thing then it’s going to be a perfect ganache ... use 2 parts chocolate and 1 part cream and double the proportions if you want more like 4:2 ... refrigerate it and it will be a good ganache 😉 .. anything else ? Just ask me ..

Jalena, IF you see this since you did the video in 2019, today is September 7, 2022...I've never seen a video so explicit and although I've been doing cakes for years, I never could figure out how to make ganache to dip my eclairs in so I presume, this will do it...THANK YOU SO MUCH>!

You cant, it requires cocoa butter which is not avalaible in cocoa powder

Oh, and here I thought, for truffles its more chocolate to cream ratio. Thats awesome! Thanks. Question, 🤔 would it be the same for white chocolate? And can you make ganache with those candy melts? 🤔 I assume not...

🙃You can also do a 2 to 1 ratio as well with more chocolate. That will just make the truffle more dense. Yes the same for white chocolate and yes you can do this with the chocolate melts.

If using milk it will be flowing consistency only if u make it sit in the freezer it will freeze n give a bad taste n when you take it out of the freezer it will melt again

I just use the cheapest chocolate available at whatever store I’m at. These were the Great Value milk chocolate brand from Walmart.

Hii! I've tried making ganache but although delicious, most recipes are too much for my usage so I think I'm kinda wasting ingredients. Plus whip creams are not that cheap. Is there a way around this? For example, can I use either non-dairy whipping cream (lasts longer in the fridge) or coconut cream? I only bake when there's an occasion so storing it would still be a waste. Please help I'm baking this tomorrow :(((

Depending on how much ganache you need, like one to one ratio. So for example one cup of cream to cup of chocolate. 1/2 to 1/2 cup. It's all up to you. Sorry for late reply 😅

I think you better of understanding the ratios of the tipe of ganache. For esample I kwon that for a thick ganache that I can use for frosting on the outside I need a 1 to 3 ratio. So if I have 100 ml of cream I need 300 of chocolate. And depending on the thickness you can have a 1 to 2 ratio or a 1 to 1 ratio.

The measurement is in the video. 1 part cream to 1 part chocolate. Depending on how much you need just match the measurement for the cream and chocolate. Example... 1 cup cream and 1 cup chocolate.

I want to know what my ganache will be like at room temperature, and that varies based on ratio of cream to chocolate. In the fall, I piped ganache on cupcakes (so it was soft) only for it to be rock solid when it was time to eat them the next day. I never figured out the correct ratio to keep the ganache soft, so I was hoping this video showed different ratios for each consistency.

The science behind ganache is the more chocolate the more denser the ganache will be and quicker to harden. If you allow the ganache to sit at room temp overnight using my 1:1 ratio it will stay soft but also firm enough to pipe for cupcakes. But you can also try a 3:2 ratio with more whipping cream to keep the ganache soft. Let it sit in the fridge for maybe 2-3 hrs to firm a bit for pipping. And pipe on the same day you serve. Chocolate is so fickle. Heat and cold affect it so easily that you have to plan your time around it, b/c it could change stages very fast.

You did not say the amount of chocolate and cream in ml or grams. That's important for the thick texture.

I did. I said it’s 1 part cream to 1 part chocolate. Meaning if it’s 1 cup of cream it will be 1 cup of chocolate. If you want to double that recipe you can do 2 cups of cream and 2 cups of chocolate.
