I brought the third strawberry baking recipe. I'm falling in strawberry thesedays.
Honestly, everything I've made is delicious, so I'm a little embarrassed to recommend it every time, but
I can't recommend this recipe either,,, It's so delicious, really.
I'm not very good at icing, so I don't do icing to make the surface look neat.
You can design cutely even without such masterful icing!
Beginner can make delicious and pretty cakes too :)

▪️Ingredients
✔️Strawberry 500g
✔️ Genoise (15cm circle tin)
200 g eggs
105g sugar
13g honey
100g soft flour
24g cocoa powder
27g milk
27 g butter
✔️ Syrup
30g sugar
50g water
✔️ Cream
Dark Coverture 120g
Mix 300g*100g heavy whipping cream with dark coverture, and combine with the remaining 200g.
▪️How to make
1. Weigh all ingredients in advance
2. Preheat the oven, line parchment paper on the cake tray in advance
3. Boil water in advance.
4. Sift the cake flour.
5. Beat the eggs with a hand mixer at low speed.
6. Add honey and sugar and mix with a hand mixer at low speed.
7. Put the bowl in hot water and heat it up to 40℃. (The degree of warmth when touched with a finger)
8. Boil butter and milk in hot water.
9. Whisk eggs at high speed with a hand mixer until they become ivory. *Please watch the video carefully :)
10. Whip the batter until a mark remains when lifted.
11. Remove air bubbles with a hand mixer on low speed.
12. Add the sifted flour and mix quickly with minimal spatula using a spatula.
13. Make sacrificial batter by adding a little bit of batter to the hot butter + milk (50~60℃).
14. Pour the batter into the spatula and mix quickly with the spatula.
15. Lift bowl and drop batter into pan.
16. Smash the mold on the floor to remove air bubbles.
17. Bake in a preheated oven at 160℃ for 40 minutes. *Make sure to check if it is cooked to the inside with a skewer test.
18. Take it out of the oven and hit it on the floor to give it a shock to remove the heat inside.
19. Turn over and cool for 15 to 20 minutes.
20. Cut the Genoise into 1cm~1.5cm thick.
21. Stack in order of Genoise-sugar syrup-chocolate cream-strawberry-chocolate cream. *Video reference
22. Eat after ripening in the refrigerator for more than 12 hours😍
▪️Storage
Refrigerate immediately after making and consume within 3 days.
please Refrigerate for a day or so before eating. Much better than eating right away :)
