这款面包的整形方法大家可以参考制作其他口味的面包,比如豆沙馅面包,也可以在最后分割时分成3份制作450克的吐司。如果制作450g吐司需要180摄氏度烘烤35分钟.
You can apply the shaping method to other type of fillings, eg. Red Bean. You can also divide the roll into 3 pieces and place them in a loaf pan to make a bread loaf. If making a loaf, bake at 350°F for 35 minutes.

中种面团:
高筋面粉 175g
水 105g
速发酵母 3g
主面团:
中种面团 1份
高筋面粉 75g
糖 25g
盐 3g
牛奶 30g
鸡蛋液 20g
软化好的无盐黄油 20g
巧克力内馅:
中筋面粉 10g
玉米淀粉 3g
可可粉 7g
糖 20g
牛奶 50g
黑巧克力 40g
蛋白 15g
无盐黄油 8g
装饰:
鸡蛋液 1大勺
杏仁片适量
⏲️180摄氏度烤15分钟

Pre-ferment
175 grams bread flour
105 grams water
3 grams instant yeast
Main Dough
1 portion pre-ferment
75 grams bread flour
30 grams milk
25 grams sugar
20 grams egg beaten
3 grams salt
20 grams unsalted butter at room temp.
Chocolate Filling
10 grams all purpose flour
3 grams corn starch
7 grams cocoa powder
20 grams sugar
50 grams milk
40 grams dark chocolate
15 grams egg whites
8 grams unsalted butter
Final Touch
1 tbsp beaten egg for egg wash
2 tbsp almond slices for garnish
⏲️Bake for 15 minutes at 350°F
