Ing:
2 whole chicken cut in 8 pieces or 4 lbs of chicken
1 charcoal
2 tsp oil
Marinade ing:
2 tbsp fresh ginger and garlic
1/4 cup vinegar
2 tbsp ginger powder
2 tbsp green chutney
1 tbsp garam masala
1 tbsp cumin powder
1 tbsp coriander powder
1 tbsp black pepper
1 tsp turmeric
1 tbsp chili garlic sauce
2 tbsp mango powder
2 tbsp lemon pepper
2 tbsp paprika
1/2 cup oil
1 tsp salt
1 tsp baking powder
Method:
Clean and cut the chicken and pat it dry, make slits in them and marine the chicken in the above marinade, in the mean time get your coal ready so it is heated through, marinate the chicken really well, making sure you get it in the slits. Next lay a piece of foil on the chicken and put the coal on top of the foil, drizzle about 1 tsp of oil on it and quickly cover the bowl making sure you trap all the smoke in it. Let this sit in the refrigerator for at least 30 minutes, thrown the coal and foil away and then throw the chicken on the grill.
