Three dudes, two stouts, one basement. Chip, Chris Paynes and Michael Dawson enjoy two very different homebrewed stouts -- Dawson's Beamishish and Paynes' Imperial Irish Cream Coffee Stout -- both made with the fairly new high-extract MCI Stout malt. Guys, I'm watching this from the UK (Kent in South East England) with my last 500ml bottle of all grain Irish Export Stout (5.6%). Recipe from Brew by James Morton. It was his book and Brewing TV that got me back into brewing after a 20 year or so absence. I can't believe how much better everything is and my first two brews have been a triumph (if I do say myself). The first was a SMASH IPA. Thanks for some excellent and inspiring episodes and Chop and Brew is picking up the baton very nicely from BTV. Well done. Next brew is a clone of Brew Dog's Punk IPA. Cheers!

Have the other episodes of C&B left you lacking that vibe? If so, what sort of things would make it more BTV-y?

ChopAndBrew Episode 10 (Boat Bitter) was close but in my opinion that BtV feel is the discussion (both technical process and taste) while showing film of the process of brewing. Mixing in a few tastings or tasting notes (like Episode 21 was entirely) for a minute here and there would balance it but not overwhelm it. Video of competitions and professional speakers is not as enjoyable to watch - the information of course is relevant but for an entire episode it is overwhelmingly boring (all my opinion of course - I'm sure many will disagree). The food episodes are a very good addition to Chop and Brew! Episode 2 rocked.

Flashback - Watching this today as I brew a Traditional Single Stout Porter (for St. Paddy's day); inspired from a "Single Stout Porter, based on a beer Guinness produced back in the 1880s." C&B!

You guys are the reason why I brewed my first stout. After 3 years of regular brewing, I now have 9 stouts, and various other brews, under my belt. MO is my go to but I've tried Pearl for a couple brews now. I never expected a hobby to yield so many options and so much gratification. I have you guys, Brian and the Cobra to thank. Cheers.

Great video Chip! Loved how you had on one side, a traditional, somewhat beer purist; and then on the other side you had someone who could intelligently go crazy on their recipe. Both sound awesome.

Beamish is my favorite Stout, having lived in Cork for a few years. Getting it on tap was a great, great thing. Definitely putting this recipe to the test.

great stout, just done a stout kit with chocolate and forest fruit, not on your level but still nice, brewing your own booze is ace, cheers and beers andy.

chip!! I wanna know what Dawson's Yella beer was. If you guys did a Lagniappe or it's on Dawson's blog point me in that direction. If not you should do a review. BTW love the show keep up the good work.

Dig the Stout fest! I have been getting nice results w / cold steeping my Sumatra coffee. It tends to mellow the tannins

Great vid Chip! I cloned one of my wife's favorite beers recently, 1554 from New Belgium, Schwarzbier I believe, and it didn't turn out like I was hoping. Wondered if you are Michael might have a good proven recipe that would work with the extra Bohemian lager yeast I have. Thanks!

"Whatever." - Chris Paynes. Nice vid. I don't make many stouts, maybe one a year, but this makes me thirsty for one. I have never used that base malt either and that is something I'll have to correct.

Most likely not to an exact degree. That light, pillowy, frothy head is a result of the Nitro/CO2 gas mix. There are some breweries that have dialed that process into cans and/or bottles, but probably pretty difficult on a homebrew scales.

ChopAndBrew I knew Guinness uses nitro for their beer to get a very small bubbles and a soft foam, but I didn´t know that nitro was available for homebrewing. Thanks anyway for your response

A question about stouts and porters. Is the sugar content higher than a lager, IPA, or pilsner? It tastes like it would be. I'm type one diabetic and gave up porter and stout because a doctor said they have a fairly high sugar content. I don't like sweet alcoholic drinks anyway, but I do miss some of these beefy dark stouts and porters.

Hey Macnutz420 I too am diabetic but T2. I talked with Chip about this a little bit. By no means are we Doctors nor are we telling you what you need to do. The answer is not easy. The amount of sugar for sure depends on style but also depends on who it making it. The original gravity (OG) of a beer tells you how much sugar is in it and the final gravity (FG) tells you how much is remaining. So it depends right. So much of the sugar is converted to alcohol with some sugar remaining. As far as diabetes is concerned for me, I have to think about how I am to deal with that extra sugar. For me it's exercise, taking my meds while drinking is ill-advised and can cause more problems i've been told. So maybe you just have to have one Stout every now and again and figure out how you will compensate for the extra sugar(s).

Bryon Adams Thanks. Fear not, I know the difference between medical advice and an opinion based on personal experience.😁 I have noticed that different beers will cause the BGs to react differently. It will cause a temporary increase in blood sugar levels but a few hours later a severe decrease can occur. The combination of insulin and exercise keeps things in control but alcohol can cause strange reactions. I have had a couple of Ambulance visits from going hypo at 04:00, in my sleep. Now I have a dog that barks at me ceaselessly when blood sugars go low. Haven't had to call 911 for a couple of years. I believe it is a bit easier to stay in control for a T1. It is a bit less complicated because our bods produce no insulin, at all. If I go super high, it takes insulin about an hour to bring it back to normal range. I don't shoot insulin while drinking as it is so easy to create a dangerous hypo episode later. I have a fear of collapsing on the street because of a hypo episode and getting tossed into a drunk tank by a cop that doesn't like my beard and hair. There was a diabetic here who got severely beaten by a freaking Mountie, at a hospital, with medical staff trying to pull Mountie pig off of him. Thanks, I am still assuming the porters and stouts are to be left alone unless one of them is all I plan to drink. I do miss them but there are worse fates. I drink beer any way but do avoid the sweet drinks of every variety. Good thing I like bitterness. 😋

Bryon Adams That particular mountie was notorious for such things. His 'punishment' was to be transfered to a new assignment. Canadian police are as prone to covering their criminal members as American police. Contrary to the TV view of life, mounties are dangerous. The best and the very worst in the same organization. The so called "best" constantly cover for the worst, making the "best" no good. I grew up in a family of cops. They are all liars who hide, lie, and evade truth all the time. Also, like American police departments, they prefer to hire lower IQ applicants. The above average IQ is deemed a negative thing in police recruits because people with high IQ numbers ask too many questions and often reject a simple time saving conclusion in favour of seeking objective truth. Smart cops are trouble because they will actually think about their own orders and make their buddies look bad. Push them hard enough and they will admit it. Boss cops do not like smart cops. Now, enough of that. I just filled my fridge with local craft brewskis, including a Sasquatch stout. Now I'm cooking while waiting for the fridge to do its job.

I think most homebrewers and recipe assume 75%.

I get about 80% batch sparging with no mashout. I just did a no sparge batch of "Boat Bitter" with a mashout and I still got 80%.
