We’re heading into the Bad Ass Brewery with one bad ass guest host and co-brewer - Nathan Smith! Nathan is an award-winning Bay Area-based homebrewer, a member of the DOZE and Brewing Network homebrewing clubs, a Minnesota native. During a recent trip home, we invited Nathan to take the helm of the Bad Ass Brewery alongside Bryon Adams and Chris Paynes. The result: a split-batch of saison and lessons on mash efficiency, making brew day changes on the fly, and some schooling on farmhouse ales. [Original postdate: February 26, 2015]

This episode inspired me to brew my first Saison. I ended up aging it on 3 vintage oak blocks (8 0z) used for a chardonnay. After 3 days in the secondary with the blocks, I kegged it. Best beer I've made to date. Thanks, Chip and the CB gang!

All you guys rock, and I love the brewing videos (Like the "chop" cooking vids too; maybe need some more there to mix it up a bit harder..). Bryon, I'm honestly jealous of your setup and eventually want to get to something similar there myself. :-) But seriously, Chris is my hero. I am in awe, and can only strive to achieve his level of expertise and precision. I merely dabble, and often make completely unreproducible brews (which is unfortunate since often they are good) because I fail to take good notes and measurements... but someday I hope to be a better brewer and actually pay attention and understand WTF I'm doing. :-D Great job, all of you!!!

Learned a lot this episode. Didn't know saison yeast was supposed to be higher temp to drive yeast flavor into the beer. Just brewed a Belle saison with wheat and have had it sitting around 68 - will try this next time.

It'll be interesting to see what the French & Belgian saison yeast bring to the party. I used the 3711 in mine. not much pepper flavor with high temp though? A bit of barnyard on the back. After some 4 months in the bottles, it was like a saison-hybrid lager.

I had the same thing happen to me yesterday. I updated my mash process and ended up with a 16p wort for a saison when I was aiming for 14p. Imperial saison here we come!

Hey diverbob33 the tubes you saw are called Loc-Line and you can find it here www.loc-line.com/ . Works great and does not breakdown at high temps etc etc. Let us know how or if you use if for your brewing. Cheers

Hey Chip, can you give any more info on what additions Chris was using to alter the mash pH? I noticed he was using a liquid, was that phosphoric acid or something?

James - That was 85% Food Grade Phosphoric Acid inside an Amber Glass PET bottle with a glass eyedropper -- Safety gloves and glasses are recommended while handling. Gypsum and the Acidulated Malt also played a part in lowering the pH but nowhere near as much as the Phosphoric Acid did. The acid is added to both the strike and sparge water to get the pH into the 5.2 - 5.4 range. The amount of acid needed will depend on the volume of water used, the concentration of the acid, the mineral concentration of your water (this can change seasonally), the temperature of the water, the lovibond of the grains in the grist, etc...

ChopAndBrew Chris Paynes Bryon Adams you guys rock, thanks for the quick responses! Missouri water tends to be fairly similar to what you get in Minnesota, so this will help out when I'd rather not buy RO water. I am a clinical scientist, so I'm actually used to handling the stuff fairly regularly, so I should be in good shape. Working on some sweet mixed cultures that I am freezing in glycerin. Big thumbs up for Riwaka and Nelson Sauvin from here too. I made a amber (actually in my profile pic) couple of years back, and it was pretty much best beer I've made and /or tasted. Mr. Bryan Adams(?): You've got really nice brewing system. What sort of pump system you use?

I'm using March pumps on the system. I'd have to go check the actual number if you are interested. Chris Paynes schooled me on that too telling me to keep the level of the hoses above the inlet of the pump to keep the flow running smoothly. (That Paynes is a genius)

Bryon Adams Ok, thanks for the info. For Chip & co: It would be really interesting to see episode of these more advanced systems and kind of pitfalls that one might run into. There's so much stuff about the actual making of beer and the most basic mash tuns and whatnot, but this sort of proper lautering and pumping, etc, stuff is pretty much skipped.

+Simon Finnegan We didn't do one. Bryon drank most of it while we couldn't get our asses in gear to coordinate. He was actually not all that happy with the results. Apparently the cold basement and his makeshift attempts at adding heat didn't work so well and then never really dried out the way he'd hoped.

Thanks for the reply! Since I cant really find these hops in western WA, what would you suggest to use instead thats more common? I am trying to perform my first all grain batch as BIAB and I LOVE these farmhouse and belgian styles.

Per Nathan: Those NZ hops are tough to replicate, but this will get 'em close! Riwaka sub Mosaic + Citra blend Motueka sub Centennial + Mosaic
