I spent a year in the bush of northern BC, here in Canada. In a log cabin, nine miles from the nearest gravel logging road, -40,plus the wind chill factor, was common in December and January. I now live in the mildest part of Canada and will not be sad if never experience real cold, ever again.

Picked up on your carbonation problem with that Belgian Quad. Had the same problem with a high gravity beer. Any tips for helping get carbonation? I did the wootstout clone and also unintentionally shorted the water, so I think I was pushing 15%.

+Tony Vissoc Like Dawson mentioned you can certainly add a bit of new sugar (or sugar solution) and fresh yeast to build a bit of new fermentation and carbonation. Although some research should be done looking into the amounts and ratio. And I suppose there is always the possibility that if it's too high alcohol, it can actually keep fermentation from happening depending on the fresh yeast strain.

+Tony Vissoc I used Danstar CBC-1 yeast after a long secondary and my wootstout carbed up perfectly. It is rated for up to 14%abv and it is relatively cheap. I now use it to bottle all my big, long-secondary beers.

+Gregory Schreiter Great information, Greg. What sort of ratio of yeast do you use per batch or per bottle? Would love to pass that along if/when someone brings it up again.

+Gregory Schreiter Do you pitch into bottling bucket? Make a starter and add to bucket? Add to bottles directly? I'm having the same problem with the Hops Lamb northern brewer kit. 10+% abv. Very little bubble action.
