Ham baked with a marmalade, ginger and star anise glaze. This ham is a tasty addition to the Christmas table, but it's great to have around any time of year. Try making your own roast ham - it's easy and works out much cheaper than buying it from a shop - also it tastes better.

That sounds great. Cant have ham without Colemans mustard, a known fact in the world of eating :) I am going to give this a whirl this year. I immigrated from Manchester in 1981 and wifey has insisted on turkey for Thanksgiving ( November) so.. I do Christmas dinner and this year it will be YOUR ham and glaze. Thanks Keef.

I can’t get gammon here and i loved it when my mum cooked it. But a ham shank is a good substitute and I boil then baste it like you did. Very jealous of you right now. 👍🏼❤️

Looks yummy 😃. Quick tip with regard to grating root ginger - it's much easier to grate if you freeze it first.

Fantastic Keef! Your initial scepticism feels familiar to me as a humble home cook but such a good outcome! I'm doing a ham this Christmas for my dad. Those thick slices slathered with the king of mustards makes a fantastic sandwich! Great stuff as always 👍

I usually make ham with just pineapple juice and brown sugar and sometimes orange, but this recipe looks awesome so I’ll definitely try it out.

I pressure cook a cheap ham 45 minutes. I usually do it for pea and ham soup or sandwiches, it's works out cheaper that way

Beautiful recipe nothing like making your own and with the added bonus you can wear that massive stockpot on your head to defend yourself if the relatives have a few too many Christmas cheers and start fighting

I usually do a ham for Christmas Eve and this look great. Just one question. We usually like to make a pea and ham soup with the liquid, but I'm not sure about the orange juice? On you written recipe you say apple juice? However if making a soup with the stock, would you just use all water plus the veg? Just need a little guidance. Thanks Keef your my type of cook - nothing too fancy but still has lots of taste. I think some Chefs over the years try to hype it up thinking it is going to be so much delicious with all the fancy add-on's. Basic cooking is the best, just like our Mum's made. Little story here, my mum would cook beef mince in a pan on top of the stove (all we could afford then) and all it was, was beef mince, onion, water, salt, white pepper and just thickened with Bistro. And it tasted sooo good. I have since made it myself and yes it tastes good, but not quite like she use to make it. I think she must have sprinkled it with a little bit of mum magic.

Yeah, I decided against using the broth from this for stock/soup because of the fruit juice - it was orange, BTW - I'll fix the recipe.

In America we use cloves in not star anise. But your hand looks amazing Merry Christmas

We normally use cloves combined with a honey-based glaze. This is a different thing!

Looks wonderful - plus I know I can count on your recipes working, which is more than be said of some channels. My wife and I usually prefer a ham at Christmas rather a turkey or chicken. My mouth was watering as I watched you carve that thing. Not quite so sure I can afford a second mortgage to afford a piece of ham like that! 😂😂 Especially since British Gas started doing a smash and grab on my pension.

Well that gammon wasn't massively expensive - about £10 from Lidl - probably about half the cost per kilo of a turkey.

In theory yes but in practice this is a big chunk of meat - it will fill up the vessel and give off some scum - I always want a good amount of space in the pressure cookers for safety.

Season's Greetings to you and yours, Mr K. - That looks almost good enough to eat! 😊 I use quite a lot of celeriac in stews and things, so this time I'm going to try some of the gnarly trimmings instead of a celery stick. - Waste not, want not, eh? !! And regarding the cider, do you have any preference between dry, sweet, or one of the cloudy "scrumpy" ones for a good apple taste?

Tgat looks delicious! We can't get gammon here. Can I use a ham and just omit the boiling stage? Or should I boil the ham for the flavour?

If you've got a big chunk of boiled ham you can just finish it with the glaze and oven roasting.

Keef, what is the difference getting a gammon from the butchers as opposed to getting one from the supermarket? Is it the salt content and all the other things you mentioned added to it?😊😊

You can do that but I didn't - just left it long enough so I could get the skin off without burning myself.
