I would boil them straight away, till they were red😊, then the shell comes of easyer than when you bang them on your pan,, hehe, you should try it time..looks really tasty though, bon appetit😊they were really big...👍
Reg.T sorry for the late reply but I've been on my hols, glad to bring back some memories for you, fish stocks around the Essex coast are certainly different from back then, we have virtually no cod run anymore, silver eels have virtually disappeared, shad & horse mackerel are as rare as hen's teeth from Southend pier these days, flounder are nowhere near as abundant as they used to be, the dover sole breeding ground in the Thames Estuary was wiped out by the new container port, quite depressing stuff really!! Fish that seem to be prospering these days are thornback ray aka skate/roker, bass, lesser spotted dogfish & a fairly dependable run of spurdog offshore, things are changing indeed, thanks & all the best, Paul.
gavin McNamara, I gut mine straight after I've killed them, then skin them with pliers if I have them with me, then I put them in a bag in a coolbox/bag with ice, I portion them up when I get home & leave them in the fridge up to a couple of days then I dip them in batter & deep fry them, they have a more 'fishy' taste than most other fish, which I know sounds silly!! I think they are an acquired taste but I think they are underrated, I love em'!!
