This Classic Chicken Quesadilla Recipe is the most simple lunch you could ever throw together for yourself. Got leftover chicken breast hanging out in the fridge and those peppers look like they are about to go bad gon head and whip up one of my Classic Chicken Quesadillas. These are super filling and so easy!

Olive Oil, about 4-6 tbsp divided
1 Green Bell Pepper
1 Red Bell Pepper
1 med Jalapeno, sliced
2 cloves Garlic, minced or 2 tsp of pre-minced garlic.
1 tbsp taco seasoning
1 tbsp cumin
salt, to taste
1 tsp Fajita season
2 cups of shredded cheese
Flour tortillas
