My husband always says, "babe your cooking is so much better than any restaurant out there!" I love that he loves my cooking. I take the taught fundamentals and apply it to all my cooking. ❤️ Sometimes I do like to eat out to give myself a break from the kitchen lol

Billy, I made this for my wife before I had surgery, as I knew she deserved a nice meal before I became a husband-baby. It turned out so good and I am enjoying your recipes and videos. Thanks for sharing your talent with us. My wife loved it. Now I just need a sweet apron to continue the passion. -Seth

First of all I gotta say your videos are amazing, probably the best cooking videos I've seen online you should have WAY more followers. I made this recipe tonight and it was incredible 👌 a few notes if you're making this for 2 people (date night) 2 steaks and 4 medium russet potatoes is the correct amount, I don't have a deep fryer so I used a pot and a thermometer, the problem is that when you reach 300 degrees, as soon as you put the raw cold potatoes in the temperature goes down to 200, and it takes way more than 3 minutes to cook the fries, so either raise it to 400 before you put them in or give them a lot more time. It's usually easy to tell if they're done by the color.

I agree, I believe that when the time us right he will blow up, in a non combustion way of course, if we see it, so do many others .

Looks great. I'm planning on making this tomorrow. I think I'll pour the steak juice over the fries when they're done.

I made your fries today in three batches to try different lengths of time and crispyness on the second fry and salts (our favorite was Lawry's All Season Salt). I even triple fried my first batch since I didn't cook them long enough and that was our favorite batch. Only after dinner did my wife notice on FB that today was national fries day 😂 How fitting and you are so right, better than any fast food fries out there according to my 12 and 9 year old boys 👍. You got my sub!

Is the olive oil extra virgin? Or extra light olive oil? From what I heard olive oil does not have a high smoke point.

What about, if you take Greek Jogurt instead of the Butter, cause it would be less fat. Don't blame me. 😉 Butter is delicious, 😊 but I prefer for my sauce greek (because of less water in it) jogurt. 👍 ps.: I like that you take green onion, I like it also allot, with cheese it taste delicious. 😊

May I suggest a lemon juicer? Why risk the hassle of fishing out the lemon seeds that no doubt would fall in when squeezed with hand?

One time my friend told me to zest a lemon, so i used a microplane, then he stopped me and said "that's not zesting, that's microplaning". So is there really a difference between the two or was he just being a perfectionist?
@braxkin4007
@braxkin4007 2 года назад
yes, zesting means you are shaving the skin of the lemon ( with no white patches, which is unusual for someone to ask to zest a lemon since that takes some moderate skills) and mincing it. If you never zest a lemon the easiest way is to use a mircroplane, even some pro chefs use it so i dunno, he trippin. lol.

Better to use avocado oil or clarified butter, than olive oil, whose smoke point is really too low.
@ChefBillyParisi
@ChefBillyParisi Год назад
You would think but, I’ve tested all those extensively and olive oil far and away produced the greatest Maillard reaction on the steak.
@RicktheRecorder
@RicktheRecorder Год назад
@@ChefBillyParisi Is it just Maillard reaction or is it partly burnt olive oil?
@ChefBillyParisi
@ChefBillyParisi Год назад
There was no olive oil burnt while doing it, at all. Had a few folks test along side and they all agreed.

Hockey puck style huh? I don’t know I’ve never cooked a steak that long. After you flip it over throw it in the oven on 375 for 15-20 minutes.

You suppose to let it rest on the plate you gonna serve it on so you can collect all those juices on the plate and use it on your fries...hahahaha
