Billy, I made this for my wife before I had surgery, as I knew she deserved a nice meal before I became a husband-baby. It turned out so good and I am enjoying your recipes and videos. First of all I gotta say your videos are amazing, probably the best cooking videos I've seen online you should have WAY more followers. I made this recipe tonight and it was incredible 👌 a few notes if you're making this for 2 people (date night) 2 steaks and 4 medium russet potatoes is the correct amount, I don't have a deep fryer so I used a pot and a thermometer, the problem is that when you reach 300 degrees, as soon as you put the raw cold potatoes in the temperature goes down to 200, and it takes way more than 3 minutes to cook the fries, so either raise it to 400 before you put them in or give them a lot more time. It's usually easy to tell if they're done by the color.

I made your fries today in three batches to try different lengths of time and crispyness on the second fry and salts (our favorite was Lawry's All Season Salt). I even triple fried my first batch since I didn't cook them long enough and that was our favorite batch. Only after dinner did my wife notice on FB that today was national fries day 😂 How fitting and you are so right, better than any fast food fries out there according to my 12 and 9 year old boys 👍. What about, if you take Greek Jogurt instead of the Butter, cause it would be less fat. Don't blame me. 😉 Butter is delicious, 😊 but I prefer for my sauce greek (because of less water in it) jogurt. 👍 ps.: I like that you take green onion, I like it also allot, with cheese it taste delicious. 😊
One time my friend told me to zest a lemon, so i used a microplane, then he stopped me and said "that's not zesting, that's microplaning". So is there really a difference between the two or was he just being a perfectionist?
yes, zesting means you are shaving the skin of the lemon ( with no white patches, which is unusual for someone to ask to zest a lemon since that takes some moderate skills) and mincing it. If you never zest a lemon the easiest way is to use a mircroplane, even some pro chefs use it so i dunno, he trippin. lol.
