Cook It Like a German is back with a new episode, hosted - of course - by none other than DW Food expert Felicitas Then. Today, she’s sharing everything she knows about the classic German lentil soup with her guest - Nikhilesh Dhure, from India. Together, they prepare the vegetables for the soup, while discussing lentil dishes from both Germany and India - see what they whisked up.

RECIPE
Lentil Soup
Ingredients for 4 people, preparation time about 45 minutes, plus soaking time.
Ingredients:
250 g dried plate lentils, soak in water
1 onion
2 carrots
1 piece of celeriac
2 large potatoes
150 g streaky pancetta
1 leek
1 tablespoon butter
1 liter beef stock or vegetable stock
1 to 2 tablespoons vinegar (e.g. brandy vinegar)
1 tsp. sugar
marjoram
black pepper, freshly ground
nutmeg
1 bay leaf
1 tablespoon hot mustard
salt
4 wiener sausages
1 small bunch of flat-leaf parsley
fresh sourdough bread
Preparation:
Soak the lentils if necessary (follow package directions). Then finely dice the onion into small pieces. Dice the carrots, celery and potatoes. Cut the bacon into small cubes as well, dice the potatoes in slightly larger chunks. Cut the leek into slices.
Now heat 1 tablespoon of butter in a pot and fry the bacon in it. Then add the onions first, followed by the rest of the vegetables. Fill everything up with broth and add the lentils. Leave to simmer for about 20 - 30 minutes until there is a creamy consistency.
In between, season with vinegar, pepper, sugar, marjoram, bay leaf and some mustard. Don’t add salt until the end. Finally, heat the sausages in the lentil soup either in slices or whole. Chop the parsley, pour over the soup and serve with fresh German bread.

It is really nice to see something German represented that isn't Haxen, Döner, Schnitzel or Currywurst.

As a Canadian with German family, I would like to make a recommendation. Please have Felicitas as Germanys ambassador to Canada 🇨🇦. The food and discussions are great on every program. But her pleasant manners, gentle humor and intelligence make her a person who will hold your attention.

What a lot of Germans do, which I really like to put more vinegar and quite among of sugar to the soup directly before I eat it. I love the mixture of sweet and sour in this dish

That was a "come here, my fried, we should join up. All that tedious shooting one another Is so unnecessary. Just arrange the parades and we shall act like civilized gentlemen."

This recipe turned out awesome. I didn’t have marjoram/oregano or potatoes but made the rest as listed and used turkey knacks from a local German sausage vendor. It was delicious and great the next day as well. Easy to make as well!

What is the sausage used in the soup? I supposed some kind of smoked sausage would work the best with the bacon. If I am going to make this recipe here in the US, I probably will use keilbasa and cut them into 1 cm slices. A complete sausage floating in the soup seems unusual, I guess that is why this is the German style. I also think if the amount of liquid is reduced and the lentil are not soaked so long, this can be a good lentil stew with bacon and sausage.

It's ok to salt the lentils early. initially the lentils firm up for the first 5min, but as.the salt takes contol the lentils begin to soften and let more salt in. This process accelerates rapidly and you end up with.well seasoned lentils quickly Works with.beans too, though I shall be accused of heresy.

The biggest food difference between Germany and India is the meat consumption. Higher number of vegetarians in India. Problem is the world's consumption of animal products is increasing and it's not sustainable. Plus animal welfare is a joke. Why not create German and Indian fusion but plant based. That'll be creative.
