This tutorial will show you how to properly prepare and use colored cocoa butter to add a splash of color to your chocolates. Our ChocoButter comes pre-tempered and only requires small increments of time in the microwave or warm water bath to become the perfect temperature to begin creating a masterpiece! Spray it, paint it, splatter it, mix it... adding brilliant color and shine to your chocolates has never been easier!

I feel like this product has a lot of potential for people who want to create beautifully detailed works but as for larger projects, I think working with pre colored chocolate saves a huge step.

Pretty cool stuff if you dont want to make your own great idea as in the airbrush demo note i am an airbrush artist i just would like to point out you will start having issues if you keep heating it up do to the fact some parts have a coating of beeswax to ensure a tight seal other than that you gals have some amazing looking chocolate

Hello, which compressor do you advise which works best on cocoa butter? Does 1/4 horsepower or 1/6 hp good to use?

Hi, I did make it but I faced 2 issues, first the chocolate bonbon come out of the mold very hardly, the second issue is after I grab one to taste it the cocoa butter coating stocked to my fingers, it looks like paint. Thank you for sharing these videos with us.

If I was to airbrush straight into chocolate ganache on a cake (dried) what heat do I need the cocoa butter to be to make sure the chocolate ganache doesn't melt off the cake ?

You cannot change the temperature of the cocoa butter, because it always has to be at a set temperature (about 35 C if I remember) so it can properly pass through the airbrush without clogging. The only thing you can change, is the temperature of the object you're spraying it on. For example, in order to airbrush a ''velvet'' effect on desserts, they need to be very cold first (can't remember the exact temperature), while the temperature of the cocoa butter is unchanged.

so i have tried using this product multiple times, made sure it was at 90 deg like it says, used tempered chocolate and as soon as i put chocolate on the set cocoa butter, it melts and streaks....dont even get me started on spreading chocolate on acetate painted with it on......this doesnt seem to be a good quality of cocoa butter.

You have to let the coloured cocoa butter dry and set for some time, and then you can fill the mould with chocolate. I hope you've already found your answer in these 5+ years, but I'm writing this for others who might have the same question.

once we apply the coco butter colours in the mould, does the coco butter have to dry, then pour the melted chocolate?

hi, yes, cocoa butter need to set for about 10-15 min then pour tempered chocolate over.

yes!! i ordered their colored cocoa butter and shipping was more expensive than the cocoa butter. All in the name of "Heat Safety". I was expecting some nice packing..for me to get the product rolled up in a fedex bag and put in a REGULAR FEDEX BOX!!So mad!

It's pre tempered but you have to temper it again, please explain.

Cocoa butter that has been pre tempered is hard and solid. To use it, you would have to melt it down in which case it loses temper. You need to cool it down after melting whilst shaking it or stirring to retemper it (have the correct beta crystals form) so that once you've applied/used it, it solidifies nicely, has a shine to it and a nice snap just like any other couverture chocolate.

I work at a high volume chocolate shop and we have some of this cocoa butter. I have had problems using it with an airbrush on moulds. As compared to Chef Rubber, the product is extremely thin and have had problems getting it to cover properly and evenly. If you have any tips on how to get the product to work well in the moulds, I would appreciate it.
