Cocoa buttercream for cakes, cookies, cupcakes etc. A simple recipe for a classic steamed (Bain Marie) cream (aparel) that doesn't split. It tastes like chocolate even though it doesn't contain any chocolate! It is the fine cream with which my great-grandmother Buia (from Sibiu) used to fill Ișlere, the Richard cake with walnut meringue sheets, the Sarah Bernhardt (Saraberne) meringues, the soft filled walnuts, the Yule Log, the simple cake with fluffy cocoa tops, rolls etc.
