Desserts are a huge favourite among Indians. And almost every dessert here is made using dairy, which can easily be veganized. Imagine the scale at which the suffering can be reduced if we step outside of our comfort zone.
In this recipe video, we are making Ela Ada which is a really special south Indian delicacy. It is made during Onam and other festive occasions. It has a special aroma and flavour and we have veganized this delicacy by substituting just one ingredient, so you can indulge guilt-free. Not to mention that it is one of the healthiest treats that you can have and will make you crave for more.
You can have it for breakfast or as an evening snack.
Ingredients
2 cups rice flour
1 tbsp coconut oil
1/4 tsp cardamom powder
1 cup grated fresh coconut
1/3 cup jaggery
Recipe
1. Take 1.5 cups of rice flour to prepare the dough.
2. Knead it in lukewarm water.
3. Heat the pan on a medium flame to prepare the stuffing.
4. Put 2 tbsp of coconut oil, 1 tsp elaichi powder, 1.5 cup freshly desiccated coconut.
5. Fry on a low heat for about 2 minutes.
6. Add 1/2 cup jaggery to the mixture and cook until it melts.
7. Cut the banana leaf into small pieces.
8. Apply some coconut oil and place a roti sized dough on it.
9. Spread it out over the dough by pressing gently with your hands
10. Add 1 tbsp of stuffing to the dough, fold it and seal its corners by pressing gently with your hands.
11. Steam the Ela Ada for 10 minutes on high heat in a steamer or Idli maker.
12. Serve on banana leaves and enjoy.
