Coffee Castella Cake 咖啡古早味蛋糕|Apron
植物油 vegetable oil 70ml
低筋面粉 cake flour 90g / 2/3cup
鮮奶 fresh milk 60ml
蛋黄 egg yolk 6
即溶咖啡 instant coffee 3g / 3tsp
热水 hot water 15ml / 1Tbsp
蛋白 egg whites 6
柠檬汁 lemon juice 1tsp
细砂糖 caster sugar 60g / 1/4cup
烤模 Pan Size 29cm x 7cm x 10cm
摄氏150 / 华氏300 蒸烘烤 50-60分钟
Bake at 150°C / 300°F in steam bake for 50-60minutes

Hello yall I did this recipe and it turned out wonderful. However, if you are a coffee fanatic and want a strong coffee flavour I suggest using 5g of instant coffee.

Can i use melted butter instead of vegetable oil?

Hi. I use melted butter for my cakes. Melted butter makes your cakes more crumbly and dense. Vegetable oil makes your cakes softer and lighter. I recently made coffee cake (not this one in the video) with melted butter and it tastes great. 😊

Upon cutting, top half looks fluffy but bottom half looks dense. When beating egg white should I do till long soft peaks or short stiff peaks? What could be wrong?

Hi, there are many factors for this, baking temperature, excessive stirring causes defoaming or insufficient to beat egg white

I placed my tray at bottom rack and baked for 50 mins. Checked with skewer for doneness. Looks OK except for one part. And I baked another 5 mins since its bottom rack. . Top surface dark brown and rather hard. Is it over baked? Letting it cool down now before I remove cake ftom tin

Hi,cake flour is more delicate than all purpose flour. can try to make, for every 1 cup of all purpose flour remove 2 Tbsp of flour,and replace 2 Tbsp of that with cornstarch

Why do you sometimes steam with a rack and sometimes use hot water bath ( mould sitting in water). Is there a difference?

May I know do I place baking tray at bottom or middle rack of oven? I tried middle rack and the top of cake looked burnt slightly. I tried lower rack and the bottom of cake looked dense and underbaked... Just don't know how to decide.

Hi, bake bottom rack of oven, for underbaked can try put the cake back in the oven and bake it for 5-10 minutes without the water tray

Hi, no need adjust the temperature, just increase the time by about 10-20 minutes, depending on the size of the cake

A small tip: dissolve instant coffee in cold water, not hot. It prevents it from getting super bitter and acidic. For baking, you can probably use the bitterness and acidity, but I tend to like it better without. For baking too, I'll dissolve the instant coffee in cold brew for more coffee flavor and less of a bite. ' v '
