280 g of rice for salads

120 g of canned tuna
10 pitted black olives
10 pitted green olives
2 boiled eggs
3 spoons of mushrooms in oil
3 tablespoons of corn
1 piece of onion
Salt to taste.
Extra virgin olive oil to taste

First, put a large pot with water and a saucepan full of water on the fire and wait for it to boil and in the meantime, start preparing the ingredients. Wash and cut the tomatoes into small pieces, cut the scamorza cheese, cut the black olives and green olives finely and put everything in a large container. Add a handful of salt and rice if the water is boiling and cook for 1 minute less than the expected cooking time, but in all cases taste and remove it al dente. At this point he should also boil the water in the saucepan, so put the eggs and cook them for 7-8 minutes, remembering to add a spoonful of white wine vinegar to the water to avoid breaking them. In the meantime, continue grating half a courgette, add the tuna and corn and start mixing. Remove the eggs, let them cool under cold running water and cut them into pieces and then, once cooled, add them to the container. Drain the rice and pass it under cold running water for a couple of minutes and then let it drain well for 5-6 minutes. Once the rice is well drained and cooled, add it to the container together with the other ingredients and mix well. Taste salt and if necessary, add another pinch and continue stirring. Put a couple of spoons of extra virgin olive oil and mix again. At this point, I would advise you to add some basil leaves and refrigerate for at least 2 hours. Salad rice can be kept in the fridge for 1-2 days and is very convenient as it can be prepared early in the morning for lunch or dinner or the evening before for lunch or even dinner the next day!
