Back in the day we had home economics where we learned to cook, bake, how to shop, sew and so forth.. It's not so prevalent now. Then you had shop class, drafting, wood working that taught you how to work with your hands, how to measure, how to fix things and so on. It's amazing to me how education and what's being emphasized has changed.

Thank you for this video! It reminds me of the way my mama use to cook. I am so sorry I did not spend more time with her in the kitchen. She was an awesome cook and cooked for the family for decades. Unfortunately, she passed away in 2012. I miss her dearly.

I used to work at a restaurant in North Carolina where I had the pleasure of meeting Miss Annie, she was a true Southern Cook like yourself. I enjoy seeing the different ways people make their greens. We didn't have a lot of meat in our greens, only enough ham hock to flavor them, and we seasoned with black pepper, apple cider vinegar, and a LOT of red pepper, and we still added Tabasco at the table. Virginia ham, black eyed peas, collards, and corn bread were like a Sunday ritual for us. Thanks for the upload.
when I was 18 I lived in a rooming house in St Louis with two ladies. one from AL one from Miss issipi. I was truly blessed.. they taught me to cook....you remind me if them. cause. I learned. just like you teaching it. I don't eat pork anymore. but it still good cause I no how to season. thank u fir Ur videos. love em
Hamhocks and bacon grease kept on the back of the stove. Chris, you certainly brought back memories! (We kept our grease in a coffee can when I was growing up). I know those greens were delicious.

I love how old fashion she cooks. This is my first time trying the Mac & Cheese recipe and the Collar Greens for Thanksgiving. Also I did try the chest pie. Turned out perfect!!!. I have learn a lot.

Thank you Chris! I learned something new today on how to season my greens even better, Lipton Onion Soup Mix! Normally, I dice up some onions, garlic and a jalapeno pepper. I love using Fat Back, because I LOVE eating the skins after frying them up. Like you I use my leftover ham bone, with extra meat on it, therefore I don't use ham hocks, just the big ham bone and fried Salt pork! You're lucky I don't live close by, or else you would have a regular visitor, and I would DEFINITELY HELP you clean those greens, as you clean yours as I do mine in salt water, killing off those bugs!

In Brazil we usually wash the leaves before cutting them, but yours is a better method. To cut them and then wash seems a great deal easier, actually. Will try it next time I make it. Thank you for the video and tips.

Miss Chris thank you so much for this video. I got 12 lbs of 'washed' turnip greens for next to nothing. I'm a seasoned canner. I like my greens to be really, really clean. I worked through them all day yesterday and have pressure canned them today with a bit of salt pork. Was able to can 9 quarts. You inspire me!

I thinkt his is the first video for collard greens that had so much information and step by step. I haven't had good collard greens since my mother and her sisters all passed. I've tried but never took the the time to learn from my mother (huge regret) but I keep trying and I will now try using your steps. I will let you know how they turn out. Thank you.

I love the way you cut your collards..i tear them like my late mother did to make sure we didn't eat the big stem..cook in salt pork and ham hocks..where I live some neighbors always cook in salted pigtails..don't care for them in my veggies..im glad you take your time talking on how to cook different foods on your vidieos you are amazing diva..lol !! peace,love and happiness to you !!
Love your videos. I am an amateur cook who just worries about feeding myself. With that in mind, how I cleaned my greens was to put them in several sweater bags and put them in the washing machine with the proper water temperature on low agitation and wash them. Boy did they come out clean. 😀 Thought you might enjoy my journey as an amateur cook who cooks only for themselves.
Because sometimes the greens I buy can be a little dirtier I tend to add vinegar,salt and baking soda to my water. Then wash about four times. I really do appreciate your technique and attention to detail.
