I think only foodies like us can actually appreciate the color in everything! LOL. That's one of the things I love about this recipe, the caramel color that the coconut gives the rice.
I actually haven't tried coconut rice yet and I'm all about the rice. And that's so interesting that you are adding soda into the rice, I wonder if I can do that when cooking steamed rice.
When I lived in Panama in the 80s, my maid use to make this for me. I was a little girl, and she use to cook the most interesting things. Her name was Vita, and she was from Colombia.
I made this last night and the flavor was amazing but my rice was not cooked enough. I used the exact measurements I was supposed to but the only thing is I used short grain rice instead of long grain rice. Do you think that’s why my rice didn’t cook all the way?
I think you probably had your heat a bit too high and it made the liquid evaporate faster before the rice had a chance to cook completely. The short grain rice only gives you a stickier texture given that it has more starch.

I was scared that you were gonna forget the coke at the end if you dont add it then your not eating real colombian coconutrice Been eating this for as long as i remember I grew up eating it with avacado salad pretty much lettuce tomatoes onions and avacado vinager olive oil salt and lime as dressing And carne pullada or fried fish and patacon which are fried plantains my favorite dish that my mom makes on special ocasions
Have anyone actually tried this? I’ve tried twice and my coconut milk never turns brown only a thick marshmallow white look. I cooked it for 1.5 and it never turned brown 🤷🏽♀️
That's really strange Ja'Neane because all you need to do is let it simmer until it starts to turn brown and it HAS TO because once the milk starts to evaporate, the leftover coconut fat will start to brown and the longer you cook it, the darker it will get. It could be that you're cooking it over very, very low heat and it's just sitting there without anything happening.
