Comfort pasta alla norcia 

This has become a comfort food. After 4 or 5 weeks of mayhem, I needed it.
Norcia here maps.app.goo.g... I have yet to visit, but they make this sausage which is key to at least two classic Umbrian sauces.
Two masters have been consulted, and this is the latest interpretation. These masters are Umbrians.
