It’s a flow restrictor, rated for 20 gpm. The trap is designed such that if more than 20 gpm flows into the trap its efficiency is greatly reduced. Luckily it looks like just the triple sink is connected which shouldn’t have more than 20 gpm so should be a non issue

Hi Tim. Question please. I work in a prison under UPC guidelines as a fake plumber lol. Our kitchen has everything hooked up to go straight to sewer except tilt skillet and 2 kettles. Those go to a grease interceptor outside. The garbage disposals (5) sinks and floor drains and mop basins go straight to sewer. Now the main drain always clogs. Shouldn't they have designed all that equipment to drain into the grease trap as well?
