this is probably the best and one of the two videos I've found on youtube that actually talks about the mechanism of condensation. Most videos just show getting a water out of the two hydroxyls, one on each sugar. Thank you sir!

I came here to understand rice wine fermentation process because I want to make it myself. I was confused if the conversion of starch to sugar produces any liquid (to make sure what I will be getting is wine and not other liquid products after the wine fermentation). Oddly, I surfed many sites until I saw this presentation. Thank you!

I find this video very useful, I hope you can make another video about the mechanism of hydrolisis by enzyme, especially alpha amylase.
