Wow this is literally exactly what i was looking for, thanks man. Only thing im doing different is bringing the retrieval chest(s) up to the front so i can hide everything else. Again, thanks!

That is more than I expected. But you mentioned a few things I didn't think of, so that is great! Would you recommend that the Chest be the Input Chest for your Item Sorter? Or would you do it right from the Water Streams (so the Hoppers I guess... and your Item Sorter would be underneath them)?

You could really do it either way. Having the water streams flowing over your item sorter may be more compact (So, yes, replace some of the packed ice with hoppers, etc. to make your item sorters.). In my case, the item sorter was a ways away from the moss farm and so that is what the single water stream going to the chest represents.
