Coo-coo is popular dish in the Caribbean that is typically made with cornmeal. In Trinidad & Tobago Coo-coo is commonly served with callaloo and stewed fish or fried fish.

I'm from Barbados so I never knew about adding coconut milk until I tried Renee's recipe two years ago. I shared it with my Trini neighbors and nobody complained. I think because I used a wide shallow pan like hers, I didn't feel like I was working as hard as when I cook it in a regular pot.

I like when you say “your” recipe because sometimes we are not open to different methods or ways. To me, cooking is chemistry and artistic creativity. Definitely will try your method. Anything with a good gravy is 👌

🇹🇹 I didn't follow your recipe as I omitted the ochro but I followed your method and as you said "firm but giggly" which I refer to as " melt in your mouth". The cou-cou came out great so good you didn't need anything to go with it. 🇹🇹

I know you mention it's the national dish of Barbados, thank you. But please don't confuse the two, Barbados cou cou is nothing like this. We like ours simple, okras, cornmeal, salt, water. The flavour is all in the gravy, whatever is your choice. Thanks again for the mention/history of the dish.
