Arlene returns to Trinidad to bring us some good ole “Tobago Coo Coo”, accompanied with the obligatory Fried Fish and Callaloo!
INGREDIENTS
2 cups of Coconut Milk
6 medium sliced Ochros
6 chopped Pimento Peppers
1/2 cup shredded Carrots
1 1/2 cup Cornmeal
1 to 2 cups of Water
1/4 cup Butter
METHOD
1. Add coconut milk, ochro, carrot and pimento peppers to pot and bring to a boil.
2. Season with salt.
3. Allow to cook and thicken.
4. In bowl, combine cornmeal and water and mix to a runny consistency.
5. Add cornmeal mixture to pot and stir until all ingredients are fully incorporated.
6. Continue to stir over a low heat until the mixture begins to pull away from the sides of the pot and bubbles up.
7. Pour into a greased baking dish.
8. Set aside and allow to firm up.

In Ghana 🇬🇭 this is banku. I couldn't figure out why it tasted familiar when I went to Ghana. I asked for the ingredients and it was okra, corn 🌽 meal and fish on the side. Just like in Barbados 🇧🇧!

That’s a great idea, to add the water to the cornmeal first before adding to the heat. This helped a lot.

Boy, if/when a young guy like myself gets married, and I decide to get married in Trinidad, I know who to call for catering now. Hopefully my family, who are from there, are not too upset. Lol I love coo coo by the way. Grew up on it. Great video.

Just learned how to make coo coo Tobago style. Easier than the way my mom made it. I like that you added shredded carrots and coconut milk. Will definitely try it this weekend.

My 2cents on the Corn Cou Cou spelling is has follows, it's spelt with the 'U' because our French influence cou by itself in French means neck but together cou cou is also a way of saying 'hello.' This dish is yellow, vibrant, speckled with many bright colours and coupled with the taste...it is definitely saying 'Hello!".

Thanks for this recipe, I just made it (with some modifications to substitute ingredients I don't have). Where I live the corn meal is white, and you have to buy polenta if you want yellow corn meal, so I used what I had... and also I didn't have pimentos (not even sure I know what that is - the stuff inside stuffed olives?) so I used red sweet peppers instead. I didn't have coconut milk, just a tin of coconut cream, so I used that can and just added 'n 3rd tin of water to the mix to make it more milk like. I added garlic and some chilli salt for a little bite and I must say it looks and smells beautiful. I'm going to serve it up with the "braai" aka BBQ we are having later today and I might make a tomato relish sauce to dip the coo coo in, or I might just eat it as is with the meat. I'm so glad I finally know what to do with the okra I get at the shops and then throw away when they go bad. This is so easy and fits right in to our regular meals... It's going to be delish!

Modern Wase easy in the fifty’s they never put 🥕 coconut milk it was just ocrhors fresh 🌽 and then they put butter in a round bowl and roll it in the shape of a ball I love ❤️ the modern way less work mine you i am talking about the fifty’s love ❤️ it🇹🇹

In Barbados it's only spelt Cou-Cou and we have been stirring it with an electric hand blender for a while now.

what brand of cornmeal used. different cornmeal cook with different timing. also homemade cornmeal is also a different matter. so help. i do not like promasa cookoo it to sofee sofee. help

Looks beautiful especially the plating at the end. I think sometimes the coo coo texture turns out different depending on if you use fine or course grain cornmeal.

My grandmother must be the only person I know who takes the coucou off the stove, put it in a large bowl with some butter and shake it into a nicely formed loaf. This dish thing is strange to me.🤔
