INGREDIENT LIST (Serves 36):
1 cup pecans or walnuts (4 ounces)
1 1/2 cups unbleached all-purpose flour (7 1/2 ounces)
1 teaspoon baking powder
1/2 teaspoon table salt
12 tablespoons unsalted butter ( 1 1/2 sticks), melted and cooled
1 1/2 cups packed light brown sugar (10 1/2 ounces)
2 large eggs, lightly beaten
4 teaspoons vanilla extract
6 ounces white chocolate chips (1 cup) or chopped bar, or 3 ounces each white chocolate and semisweet chocolate chips

Just made these; I opted to lightly brown my butter, but otherwise followed the ingredients list to a T. I made one significant error with the recipe, however, which is that I got it in my head that I was supposed to use a 9”x9” pan to bake them. I realized my mistake 10 minutes after putting them in the oven, then proceeded to spend the next hour stressing out.😬 Well, I’m here to report that they were fantastic… Amazing, intense butterscotch flavor (I _highly_ recommend browning the butter) and everyone who tried them thought it was fortuitous that they were cooked in the undersized pan, because these were the perfect level of chonk and fudgy. I think they would have been too thin and on the dry side had I used the 13”x9” pan called for, but that’s obviously a subjective preference.

We make these with a nearly identical recipe, but we like to use half white chocolate and half dark. My daughter called them “freckled blondies” when she was very little.

i will try this with 1 change. i will melt the vanilla milk chips and add it to the batter. it will work as long as you dont add to much of them and maybe cut back on the sugar a tbsp. lol. also make it with cocoa butter yummy! ive made a recipe but didnt write it down and never did it again as good and they were GOOD.

The unholy amounts of vanilla are the genius trick. Most people would settle for the standard teaspoon. BUT THEN, MOST PEOPLE ARE NOT GENIUSES.

Not sure about Cooks Illustrated but the ATK book explained that their blondies use melted and browned butter to make it more chewy, dense with a toffee note.
