For those who do not know this easy dish that all Algerians love, this is the story behind it. It is said that it was invented by the Spaniards during their occupation of the coasts of Oran (an Algerian city), and when the local resistance besieged them at the time, they could not find anything to eat, so they crushed the chickpeas they had and mixed it with some ingredients to get this dish. Which they called “Caliente”=hot (in spanish) and in Algeria we find people who call it karantika, garanitata, karan or الحامي/al-hami/=hot. Thank you for sharing our dishes w/ the world ❤🇩🇿. Edit: guys you can add some new information, really appreciated.

The black part is actually the best part 😭💔 it was perfect just before u took it off 😂 And for the egg you're supposed to add it into the food processor and not on top of it :)) But I think it came out pretty good and im happy you liked it !! Thank you for honoring our food ❤🇩🇿
Algeria 🇩🇿 my beautiful country ❤️, it is a continent full of diversity in all fields, traditions, food, nature And we as Algerians, wherever the name of our country is mentioned, you will find us there to support it. we will love it forever vivaa l'algérie 🇩🇿❤️❤️
My grandfather and his mother were born in Algeria. Thank you for sharing their cuisine. You have given me a glimpse of what they ate before immigrating to America. It all looks incredibly wonderful and flavorful.
This is not an algerian recipe though, algeria is a recentely born/ created country.. This recipe is 100% moroccan, and it belongs to both the north and northeast of Morocco where it is known under the name of KARAN. All what algerians did is changing the name from Karan to Karantika.. This video is exactly like if he made a pizza and called his video Cooking algeria pizza, while the pizza is worldwide known that it belongs to Italy! ;)
@@ayurayur89 Why do you lie, Moroccan, Algeria is Numidia, but you were the Emirate of Fez and the Emirate of Marrakesh, and you alone were Marshal Hubert El-Liouti in the year one thousand nine hundred and twelve

Okay! As an Algerian, I was jealous of your result from the first try last time... Now, I should not show this to my mom! It took her so many tries to perfect karantita!! Ps: at home we fight over the burnt piece!
@Son Of Rabat hhhhhhhh since when oran was morrocan ??? Didn't you always saying we are a strong kingdom and no one occupy you now you admit it that you were ruled by Spain too hhhhhhhh
You're really awesome mate ! I advice you to try a very delicious Algerian dish, i'm sure you'll really love it. It's called "Bourak", hope you'll try it soon !
1. Mhajeb is simply the plural of mahjouba. So, don't worry about your previous vid. 2. The only thing you've missed in your karentika/garantita is that little pinch of cumin on top of that chickpea pudding. 3. Now, you have to try : chakhcoukha, couscous, zviti, doubara, dolma, rechta, berkoukes, hmiss, chorba/hrira, loubia, bouzelouf, lham hlou, bourek, hahaha ! Anyway, glad to see you do appreciate this Algerian specialty...
That's a really good suggestion. Mthawem is unique, I don't think there is something similar elsewhere. It's ground meat +almond meal meatballs, cooked in a tomato-less garlicky sauce where the name is from. Mthawem=garlicky 😁
I love Your videos and Your interest for foreign cuisine. I'm from Germany and have never eaten this Algerian dish but it looks absolutely fantastic and I will try it for sure. Just while watching the video a dish from Tuscany in Italy came to my mind. It's called Torta di Ceci or Cecina and is a well loved streetfood there. It seems to be a close relative of the dish You were cooking. I've eaten it in Pisa and loved it very much.
Hi , in Oran and the west of Algeria, they call it : Karantika. The rest of the country Algiers in particular, it's known as Garanteta. Very impressive vid !! Keep it up. Algerian in the UK.
Hi ,I am Algerian and I can say that you did well , I have some advices for you if you will cook it again. You are not obligated de put it in the blender , in general we put all the ingredients and let it rest for an hour or more . In the ingredients you should put cumin in the Bigging as went you add salt or pepper ,and you add some more went it's cooked . It must be giggling lol. And it must be have a burned face 🤣😂 this is were all the good taste is. The egg you add it too in the begging of the recipe . It doesn't mind to call it karantika (ouest Algeria call it like that) or garantita (one the center of Algeria Calla it like that) . You can add some olive oil on the top went it's cooked . And we drink with it a soda. At the end thank you to represent one of our preferred dishes
My husband is Algerian working nights. He usually makes it so i was looking for measurements. We mix 2 eggs in with everything just by hand. Yours looked really good. My husband would have loved the burnt part. :)

Kinda jealous that yours came out perfect on the first try 😂 it took me a while to perfect it , you did amazing , also as Algerians that burnt layer is the essence of this dish . More Algerian food please . Cheers from Algeria
Wow I've watched just a couple of days ago your Mahjouba recipe, and mum gave her seal of approval (minus the carrots :p ) Mhajeb is the plural of mahjouba, so you're good!
First of all thank you so much chef for cooking my favorite Algerian street food, and seconde of all, when cooking karantika you need to heat your oven to the maximum for at least 30 mn before you cook it, after you put it in the oven it shouldn't take more than 15 to 20 mn to be ready..(use a stainless steel baking dish for best result) it tastes better in a baguette sandwich with a lot of tunisien harisa and some cumin sprinkled on top 😋 Btw, I really like your videos! Keep up the awesome work you're doing 👏
we call it karantika for those who lives in the west...and garantita for those who live in the middle ( the capital and all the cities around)...next time try to mix the egg with all the ingredients , also try to put it in a large plate and this will give you a perfect result , I mean a thinner layer which is very easy to eat 🤌 but really bravo 👏 you did well
The chickpea flour you used is pronounced as "bay" (as in -a broad inlet of the sea where the land curves inwards) and "sun" (as in -the star around which the earth orbits) so it is "bay-sun". Also, the recipe was very cool .✌🏼
what? that's quite weird, may be you are from the most southern parts of Algeria , that's the only region that I can think of were there is no Karantika or as we call around Algiers Garantita. let me know am quite curious.
@@sammainman9464 hello Sam. My dad is berber (kabyle) and my mum is alsi berber but from south of the country originately. Butttt she grew up in Algier with most of my family from her side. And I was actually born there and left at 8 during the civil war... Although my family always tried to continue on traditions i have never seen that dish. So I cannot wait to try it myself. I will ask my mum if she knows and why she never cooked that. Take good care
it's the most delicious dish for me and i think that the right name is karantita ! Thanks so much for your videos about Algerian dishes we really appreciate it 😍 , I'm a new one here and I'm an Algerian one too lol so yeah , wish you the best chef lol 💪❤
Many of Algeria’s neighboring countries were affected by the Algerian cuisine, and dishes were transferred, including couscous, tagine, pastilla and sweets.. There are several historical books that talk about this.. ✍️

Hey ! first of all thank you for the video and promoting algerian food you did a great job but i'll give you some advice to have the most authentic version of Karentika the egg should be added in the begining amoung the other ingrdients + no need to use a blender but feel free to use it + do not forget the cumin it's what give the dish so much flavors

There is a similar dish in Sicily that is popular called Panelle. The chickpea flour is cooked in a pot, and then spread out in a pan or directly on a table to cool. Once hardened, you cut them into squares and fry them in oil. You then but them in a sesame bun with a scoop of ricotta, and sometimes, a slice of fried eggplant. I grew up eating this in NY and still make it today. It's freaking delicious!
Thank you from Algeria 🇩🇿🇩🇿🇩🇿 I'm not here to learn to cook, but just for the pleasure of seeing you interpret our recipes, and learn some English, thank you!
If you want, you can add fries alongside grandtita in the sandwich; makes it a lot more better in my opinion. Some like to add both Harrisa and Mayonaise in the sandwich, as unhealthy as it is you can double the taste factor that way.
Thanks so much for cooking and appreciating Algerian dish. I ate karan many times when I was in Oran. So delicious. And now I prepare it myself at home sometime. Very easy and beloved dish. Love from Algeria 🇩🇿
