Recipe from what I managed to gather from this hot mess of a montage: ## Ingredients: * Green leafy vegetables, cut into strips * Shallots (or onions as an alternative) * 4 eggs * Tofu (3-4 pieces, I would say ~200gr), fried and cut into cubes * Mustard seeds, 2 tsp * Curry leaves, 15 pieces * Pandan leaves, 10 pieces * Dried chili, 3 pieces * Ginger garlic paste, 2 tsp * Lemongrass, 1 stalk (crushed) * Coriander leaves * Mutton stock (with meat pieces), 200ml (can be swapped for chickpeas for a vegetarian version) * Coconut milk, 200ml * Rice vermicelli, 400g * Bean sprouts 3-4 handfuls ## Instructions Preparation: Cut the green leafy vegetables into strips. Chop the shallots (or onions if shallots are not available). Eggs & Tofu: Fry the 4 eggs and cut them into strips. Fry the tofu and cut it into cubes. Spice Mixture: Stir-fry the shallots until fragrant. Add 2 tsp of mustard seeds. Incorporate 15 curry leaves. Mix in 10 pandan leaves. Add 3 dried chillis. Stir in 2 tsp of ginger garlic paste. Crush 1 stalk of lemongrass and add it to the pan. Add coriander leaves and stir until the mixture becomes fragrant. Adding Liquids & Noodles: Pour in 200ml of mutton stock with the meat pieces. Add 200ml of coconut milk Introduce 400g of rice vermicelli to the mix, stirring with chopsticks to avoid breaking the noodles. Add in the bean sprouts and leafy greens last. They don’t need to be pre-cooked as the heat from the dish will cook them adequately. Serving the Dish: Serve the dish and enjoy it with sambal on the side.
