i put 1 cup less sugar in mine. the potato is sweet already and no one can tell . i put raisin in half the batch. my family is from urlings and st johns.
You must remember that there are some people who have high blood pressure and have to be careful with the salt including me. So I have to take out some of the salt from the saltfish.
They need to get a real chef, some young person who studied as a chef and can make Antiguans dishes, to assist. And call them the real Antiguans names. We have kiddie stew, not goat water,. Cow heel soup, not bull foot. Pepperpot, not callaloo.
