I just watched Brenda’s video for Corn Dip. Where as Brenda and others have made videos or sent in recipes, this recipe varies from Brenda’s so it is doubtful this lady “stole “ it from Brenda. In any event this is not worth losing sleep over and it is always welcomed when others share their tried and true family favorite recipes. I especially liked the manner in which Randa shared the recipe complete with explicit directions and products. Thanks to Tom and Melissa for sharing the recipe that was sent to them. I enjoy Tom’s videos and look forward to each video.

I’ve been making this same recipe for a long time and we love it. I’ve even baked it and it’s oh so good hot too. Randa is right about this dip being best with Fritos corn chips . Hope y’all enjoy for many years.

Hi Tom, i have a little tip about the jalapeno. To take the seeds out you just take a teaspoon and scrape it off. It takes like ten seconds and will get it all.😊

Oh they are not lying, i rubbed my face and it was on fire. It turned all red and burned. That had been the first time i ever had a jalapeno. That was only time i did that i learned fast😅
We love this recipe, too, and over the years have modified the recipe to our tastes. Instead of canned corn, we buy fresh corn on the cob and roast it on the grill which intensifies the sweetness of the corn. I prefer fresh yellow, red and orange bell peppers and they’re pretty too, and of course, fresh jalapeños. Hellman’s mayo is definitely the best in my opinion. We like ColbyJack cheese blend. I don’t add sugar but I do season with a pinch of cumin, salt, pepper and cayenne to taste and add fresh cilantro before serving or just garnish for those who don’t like cilantro. We serve with good tortilla chips or Fritos. We love your videos and have tried most of your recipes with success! God you you both as you enjoy your winter vacation. Btw, I’m a Texas gal, too!

I was thinking the same thing! I have a scrumptious English Muffin Tidbits recipe that I am going to send Tom and Melissa. It requires things cut up really fine and I don’t have that skill. So Tom would do a much better job with my recipe.

I made the Corn Dip and we loved it. Thank you for all the wonderful recipes we have really enjoyed them. Here is a recipe I have made many times and my family loves it Homemade Mounds Bar and so easy to make Mounds Bar 2 cups melted milk or dark chocolate 3 cups of coconut flakes 1 cup sweetened condensed milk Mix the shredded coconut with the condensed milk, shape them into an oblong shape,freeze them for 20 minutes, then dip them into the melted milk or dark chocolate.
My momma had tons of snack food recipes, my fave was her shrimp dip she served with bugles ( I found out later it makes an excellent finger sandwich filling)

Hello, Tim and Melissa! I made this yesterday after church. It chilled for 2-3 hours and had it with Sunday night dinner. It was okay, but I was a little disappointed. However, I’m old enough to,know it will be better the day after. Oh boy, was I right!! It is amazing!! This will become my standard dish to carry to pot lucks or snack events! About you recipes from others.. I agree with you. I have made so many recipes that were very disappointing from other channels. Save the stems of those jalapenos for homemade yogurt starter. 6 stems to 1 quart yogurt, ymmv. Yes, crazy sounding but it works. Rub your hands under cold water and rub them along the stainless faucet or sink to clean the heat off your hands and get a clean sink all in one. Freeze the liquid off the corn to use as stock. Another dip that must have Fritos (any type) is a block of cream cheese with salsa poured over the block. Leave the block whole.
I couldn't find Mexicorn at my store so I looked it up on the web and noticed it is only whole kernel corn with chopped red & green bell pepper! No problem, I just added the peppers to my regular canned corn. It was great.

Hi Tim and Melissa! I’m looking forward to making and enjoying this Corn Dip. BUT CAUTION! When removing the seeds and “ribs” of jalapeños, or any other peppers, PLEASE WEAR GLOVES!!! These 2 parts of the peppers is where the HEAT is contained. Plus, if you touch your eyes, mouth (and other mucous membranes of your body) you will feel like you’ve been set on FIRE! Otherwise, enjoy adding all types of peppers to your dishes to enjoy their FLAVOR!

If you will slice the green onion in half lengthwise before slicing across they won’t run all over your board and when eating you don’t get a chunk of onion. I like a taste of onion without a big bite of it so this works for me.
We had a corn dip like this at the Round Top Texas antique fair, only it was cooked. It was soooo good! I’ll have to try this one, both cold and baked. I think I have seen something like this called street corn dip. Thanks for sharing! And thanks, Randa!
I'm not a big cilantro lover, but I think a tiny bit of cilantro mixed in would really bring out the Mexican flavor & maybe tiny diced tomato meat. Not the part where the seeds are because that would make this dip too watery. I love corn everything, so I will definitely make this dip. I love to eat Frito's scoops when I serve & eat my clam dip!
Watching this video made me want a dip. Of course I don't have all the ingredients for this Corn Dip so I asked Ken which did he want: the Olive Dip or the Ranch dip. Regarding the separation of liquids in the sour cream. If you flatten out the remaining sour cream in the container with the back of your spoon it will not separate! I’ve also heard if you put the lid back on, turn it upside down and slam it down on the countertop you will achieve the same effect. Can’t wait to try this recipe.
I totally agree with you that a recipe should be made as written the first time. That said, I can tell by looking at it that that calls for WAY too much mayonnaise for my taste. When dishes call for 1/2 Mayo and half sour cream I always do the called for SC but then cut the Mayo in half. But that’s just me. This really does looks delicious, though, and I was loving that bowl before you ever said anything, lol!

Hi Tom and Melissa. I originally stumbled upon your youtube channel looking for a hot dog chili recipe. I found yours and made it and loved it. It makes quiet a bit so I froze it in smaller portions and pull out what I need on hot dog nights. It does freeze well. I am glad I found your channel as I have tried several other recipes you have shared. I have enjoyed them all. Thanks for sharing so many delicious recipes with easy to follow instructions on making them 😊
I made this dip and I didn't put enough spice in it. I decided instead of using Fritos alone, I would also serve it with the firecrackers I made from your recipe. Boy, they were absolutely delicious. Just thought I would let you know.
Hey, thanks for your recipes, I have made several of them. Regarding jalepenos ,I wanted to let you know that Walmart sells Mezzetta brand tamed not pickled jalepeno in a jar. Also soaking seeded jalepeno in water for several hours will take out any heat still in the pepper. I do this when I make stuffed jalepeno.
I have made this dip and it’s fabulous. My favorite. I always use frozen sweet corn but very nice to know you can use that brand of can corn. I also use Dukes mayo it didn’t change the taste at least for me.
Made this yesterday for Super Bowl! Made it exactly by you directions and did use Scoops! Even better today when I got home from work! I might kick up the spice a bit when I make it next time....and there will be a next time! Thank you! Hope you are enjoying your time in Florida!

I made this, but added a bit of taco seasoning and a dash or two of blackened Cajun seasoning for some added flavor. Turned out great, and, yes, I agree.that it is great with the Fritos. Thanks for sharing.

I’m not a fan of canned corn. I might try this with a frozen Mexi Corn mix from Trader Joe’s that has jalapeños, red pepper, black beans and fire roasted corn. Thank you and the viewer that submitted this.
