Every time you shut your engine down in cool climates once the engine dips below 60F condensation starts to form. Build up causes your motor oil's lubrication ability to degrade rather fast. A catch-can removes moisture somewhat faster, simply separating it out in the crankcase ventilation system mechanically as it warms up. Without a catch-can this sludgy vapor mix will cause deposits on your valves, foul up your carburetor/intake plenum and potentially cause corrosion and rust in your engine quench area.
The moisture mixed in the oil is highly acidic.
If you live is cold climates and use your air cooled car year-round a catch-can is a excellent consideration.
The downside of a oil catch-can is people forget to drain off the water which in it's self will cause even more problems if left un-attended.
