This symbolizes the relentless progression of time, with no regard to any of our "mortal" pleas or qualms. Similarly, Shrek's statement of "can you not be yourself for five minutes" embodies the cruel irony of our modern world: that individualism as an idea is praised through speech yet suppressed in practice.
